Our 2021 Jayson Sauvignon Blanc beams with freshness and breadth, delivering voluminous layers of bright fruit and floral notes that ride on lifting acidity. Opening notes of citrus blossom, lemongrass, and Kefir lime leaf lead to gooseberry, Key lime, and lemon meringue on the juicy, well-textured mid-palate. Refreshingly crisp, the finish echoes with peach and green apple. VINTAGE NOTES Our 2021 Jayson Sauvignon Blanc harvest kicked off one of our earliest Napa Valley vintages to date. Winter rains quenched the soil, allowing our vineyard team to establish a healthy, balanced canopy early in the growing season. Late spring through summer was temperate and dry with few temperature swings, allowing the fruit to develop steadily and consistently, maturing at an ideal pace. Low yields delivered small, flavorful clusters that displayed intense concentration, advanced flavor development, and wonderful structure. WINEMAKING NOTES We harvested our Sauvignon Blanc just as it expressed vivacious acidity. The fruit was whole cluster pressed, settled, and then racked to neutral oak for fermentation and aging. Towards the end of fermentation, we gently stirred the barrels several times per week to build the richness and texture that beautifully counterbalances the wine’s naturally high acidity. The wine aged on its lees in barrel until racked for blending and bottling.

About the Wine The 2021 Clos du Bois Sauvignon Blanc is a bright wine that blossoms with aromas of lemongrass and honeysuckle. Pale straw in color, this wine delivers layers of Meyer lemon, kiwi and grapefruit with a lovely hint of white raspberry on the finish. A bright mouthfeel leads to a cleansing midpalate and a medium-long finish. Viticulture Notes We source the fruit for our delicious Sauvignon Blanc from select vineyards throughout California. The 2021 vintage began cool with much of the state experiencing dry conditions throughout the spring months. Summer brought the usual weather patterns that California vineyards thrive on: warm sunny days and cool fog-laden evenings, which allows the fruit to ripen slowly and evenly. The result is fully developed flavor characteristics, color and acidity. Winemaking Notes To retain the lively acidity and fruit characteristics of our Sauvignon Blanc, the grapes were harvested in the cool hours of the evening or early morning. After arrival at the winery, the fruit was gently pressed as whole clusters before being racked into stainless steel tanks to undergo fermentation. The yeast strain was chosen for its minimal impact on the flavors and aromas of the wine allowing the fruit to shine. The resulting wine is fresh, vibrant and delicious.

Our 2021 Starborough Marlborough Sauvignon Blanc is generous, balanced and bright. Aromas of lime zest, ripe peach and white florals unveil with every swirl. Crisp and smooth on the palate, appealing notes of tropical passionfruit, guava and kiwi blend with subtle suggestions of fresh-cut green herbs and lemongrass. The long finish is marked by palate-refreshing hints of citrusy grapefruit and Meyer lemon. Enjoy alongside creamy goat cheese, prosciutto-wrapped melon or grilled chicken. Viticulture Notes A cool start to vintage 2021 was followed by Marlborough’s classic long, warm, sun-drenched days and cool nights. These ideal conditions allowed for ideal flavor development coupled with the region’s signature crisp structure. Harvest was early, with clean, bright, flavorful fruit coming into the cellar. Winemaking Notes Sauvignon Blanc grapes were de-stemmed and lightly membrane pressed, not crushed, to avoid extracting bitter notes from the skins and seeds. The juice was fermented in upright stainless-steel tanks at low temperatures for 21 days to preserve the bright fruit characteristics, then left on light lees during maturation. The wine was then filtered prior to bottling.

The base of our blend is comprised of fruit from vineyards in the heart of the Wairau Valley, with its traditional passionfruit and crisp grassy flavors. This component is complemented by the second wave of plantings in the ever expanding Awatere Valley, which is noted for the minerality and elegant characteristics the fruit gains from the region's proximity to the Pacific Ocean. For the balance of this wine, we have sought out fruit from the southern valley of Waihopai, where the gravel soils, and later, cooler ripening climate produce Sauvignon Blanc characteristics that provide the final layer of complexity and brings balance to our inaugural release of NZ. In the glass, a brilliant pale yellow reminiscent of white currants; the wine opens with an intense bouquet of gooseberries, feijoas, and ripe tropical fruits. The bright entry of fresh cut grass and preserved lemon lead to passionfruit pot de creme showcasing a long finish of fresh herbs and clean minerality.
