About the Wine
The 2021 Clos du Bois Sauvignon Blanc is a bright wine that blossoms with aromas of lemongrass and honeysuckle. Pale straw in color, this wine delivers layers of Meyer lemon, kiwi and grapefruit with a lovely hint of white raspberry on the finish. A bright mouthfeel leads to a cleansing midpalate and a medium-long finish.

Viticulture Notes
We source the fruit for our delicious Sauvignon Blanc from select vineyards throughout California. The 2021 vintage began cool with much of the state experiencing dry conditions throughout the spring months. Summer brought the usual weather patterns that California vineyards thrive on: warm sunny days and cool fog-laden evenings, which allows the fruit to ripen slowly and evenly. The result is fully developed flavor characteristics, color and acidity.

Winemaking Notes
To retain the lively acidity and fruit characteristics of our Sauvignon Blanc, the grapes were harvested in the cool hours of the evening or early morning. After arrival at the winery, the fruit was gently pressed as whole clusters before being racked into stainless steel tanks to undergo fermentation. The yeast strain was chosen for its minimal impact on the flavors and aromas of the wine allowing the fruit to shine. The resulting wine is fresh, vibrant and delicious.

A wet winter gave soils ample water resources for the season ahead. Spring arrived with ideal conditions, giving us wonderful fruit set and healthy yields. Summer was dry and lengthy, allowing fruit to hang on the vines while ripening slowly. Grapes were harvested later than usual, delivering fruit with flavor maturity and concentration while retaining pure fruit expression.

WINEMAKING NOTES
Windward Sauvignon Blanc is a blend of our five best lots of Sauvignon Blanc from the 2022 vintage. Both in the vineyards and in our cellar, these standout blocks stood out above the rest for their aromatic intensity, layered flavor development and incredible structure. Sauvignon Blanc grapes were harvested in cool conditions, then pressed immediately with minimal skin contact. After cold settling, the clear juice was fermented entirely in stainless steel tanks at very low temperatures with selected yeast strains to preserve inherent varietal characteristics and classic Marlborough flavors. These lots sat on light yeast lees in tank for up to six weeks prior to blending.

Edna Valley is renowned its rich oceanic and volcanic soils, cool Pacific breezes, and warm sunny days. Overall quality in 2021 was outstanding.

Winemaking Notes
We harvested our Sauvignon Blanc grapes when they had developed optimal balance and desirable citrus and tropical fruit notes. A variety of specialty yeasts were used to showcase the varietal characteristics and bring them to the wine’s forefront. We fermented in stainless steel tanks at cooler temperatures around 55°F to retain delicate aromas and signature compounds. To increase viscosity and complexity, the wine was aged on its lees for two months before blending.

Smith & Hook Sauvignon Blanc V22 750ML

sale price $20.99
Fresh, bright and crisp, this pale lemon-rind-colored Sauvignon Blanc features lively flavors of grapefruit, citrus and crisp pear with subtle freshcut-hay notes and vivid acidity. The finish lingers with minerality, hints of green apple, lemongrass and a touch of jalapeño.

This Sauvignon Blanc is sourced from vineyards in the Central Coast, where consistently warm sunny days are followed by cool breezes from the Pacific Ocean at night. While below average winter rainfall led to some light early spring irrigation, the 2022 growing season continued with favorable warm weather that aided canopy growth and even berry set. Steady temperatures ensured fruit was maturing slowly allowing for gradual ripening and extended hang times. A small heat spike in late September slightly sped up the harvest but fruit still came in with beautiful acidity.

Harvested from certified sustainable vineyards, the fruit was hand-picked in the early morning, brought to the winery and destemmed. The wine was cold fermented in stainless steel tanks to preserve the beautiful natural acidity of the grapes.

These ideal conditions allowed for ideal flavor development coupled with the region’s signature crisp structure. Harvest was early, with clean, bright, flavorful fruit coming into the cellar.

Winemaking Notes
Sauvignon Blanc grapes were de-stemmed and lightly membrane pressed, not crushed, to avoid extracting bitter notes from the skins and seeds. The juice was fermented in upright stainless-steel tanks at low temperatures for 21 days to preserve the bright fruit characteristics, then left on light lees during maturation. The wine was then filtered prior to bottling.

A crisp, clean palate reveals pops of candied tangerine and mouthwatering acidity for a breezy, thoroughly refreshing finish.

Viticulture Notes:
The 2021 growing season was dry with budbreak in early March. Harvest began in early August. The resulting grapes were picked at the optimal ripeness while still maintaining their natural acidity.

Winemaking Notes:
We harvested our Sauvignon Blanc at the optimal sugar levels to showcase the bright citrus character of the variety. Once at the winery, we whole-cluster pressed, then fermented slowly at cool temperatures in stainless steel to preserve the distinct floral and fruit notes. After fermenting each lot separately, we selected just the right combination to offer bright, juicy character and crisp acidity. We refrained from any oak exposure or malolactic fermentation.
