Prophecy Sauvignon Blanc is a classic expression of New Zealand’s Marlborough region. In the glass, the wine opens with aromas of lemongrass, guava and snipped greens. Crisp, refreshing notes of passionfruit and grapefruit lead to a bright mouthfeel with a long, clean finish. The 2020 growing season in Marlborough was ideal with warm temperatures occurring throughout the summer and low rainfall before harvest. Harvest yielded slightly more fruit than the previous vintage, producing optimal acidity and concentrated flavor.

<b>About the Wine</b><br> The 2021 Clos du Bois Sauvignon Blanc is a bright wine that blossoms with aromas of lemongrass and honeysuckle. Pale straw in color, this wine delivers layers of Meyer lemon, kiwi and grapefruit with a lovely hint of white raspberry on the finish. A bright mouthfeel leads to a cleansing midpalate and a medium-long finish. <br><br> <b>Viticulture Notes</b><br> We source the fruit for our delicious Sauvignon Blanc from select vineyards throughout California. The 2021 vintage began cool with much of the state experiencing dry conditions throughout the spring months. Summer brought the usual weather patterns that California vineyards thrive on: warm sunny days and cool fog-laden evenings, which allows the fruit to ripen slowly and evenly. The result is fully developed flavor characteristics, color and acidity. <br><br> <b>Winemaking Notes</b><br> To retain the lively acidity and fruit characteristics of our Sauvignon Blanc, the grapes were harvested in the cool hours of the evening or early morning. After arrival at the winery, the fruit was gently pressed as whole clusters before being racked into stainless steel tanks to undergo fermentation. The yeast strain was chosen for its minimal impact on the flavors and aromas of the wine allowing the fruit to shine. The resulting wine is fresh, vibrant and delicious.

Our 2022 Jayson Sauvignon Blanc has fresh flavors and lively acidity counterpoised with a deep, textural richness. Vibrant aromas of orange blossom, Kefir lime leaf, and ripe guava leap from the glass. The palate opens with a focused surge of Key lime, guava, and a hint of river rock minerality. Bright, concentrated citrus and tropical fruit flavors glide through the supple, layered mid-palate, continuing laser sharp through the crisp finish, an echo of citrus meringue ringing on. <br><br> My intention with Jayson Sauvignon Blanc is to make a wine that is incredibly bright and energetic with a beautiful purity of fruit bolstered by a broad, textural midpalate. In the vineyard, I manage the canopy to encourage early ripening with acidity retention. I’m blending acid-driven valley floor fruit with intense, ripe fruit from our mountain vineyards that’s given longer hang time to fully evolve, a range of ripeness bringing nuance and detail. Lees are stirred just enough to impart a balancing richness while retaining freshness. The finished wine is a complete package of energy and crispness, complexity and depth.

Edna Valley is renowned its rich oceanic and volcanic soils, cool Pacific breezes, and warm sunny days. Overall quality in 2021 was outstanding. <br><br> <b>Winemaking Notes</b><br> We harvested our Sauvignon Blanc grapes when they had developed optimal balance and desirable citrus and tropical fruit notes. A variety of specialty yeasts were used to showcase the varietal characteristics and bring them to the wine’s forefront. We fermented in stainless steel tanks at cooler temperatures around 55°F to retain delicate aromas and signature compounds. To increase viscosity and complexity, the wine was aged on its lees for two months before blending.

A long, slow fermentation was carried out over three weeks at cool temperatures using various yeast strains to lend complexity, enhance fruit expression and maintain the classic Marlborough character. Each block was kept separate throughout the winemaking process, allowing different parcels to blend into Nobilo’s signature style.

The juice was fermented in upright stainless-steel tanks at low temperatures for 21 days to preserve the bright fruit characteristics, then left on light lees during maturation. The wine was then filtered prior to bottling.

The base of our blend is comprised of fruit from vineyards in the heart of the Wairau Valley, with its traditional passionfruit and crisp grassy flavors. This component is complemented by the second wave of plantings in the ever expanding Awatere Valley, which is noted for the minerality and elegant characteristics the fruit gains from the region's proximity to the Pacific Ocean. For the balance of this wine, we have sought out fruit from the southern valley of Waihopai, where the gravel soils, and later, cooler ripening climate produce Sauvignon Blanc characteristics that provide the final layer of complexity and brings balance to our inaugural release of NZ. In the glass, a brilliant pale yellow reminiscent of white currants; the wine opens with an intense bouquet of gooseberries, feijoas, and ripe tropical fruits. The bright entry of fresh cut grass and preserved lemon lead to passionfruit pot de creme showcasing a long finish of fresh herbs and clean minerality.

Our 2021 Chateau Souverain Sauvignon Blanc is a crisp, California-style white wine. Our Sauvignon Blanc starts with bright layers of juicy grapefruit that lead to hints of lime flower and pear. A crisp, clean palate reveals pops of candied tangerine and mouthwatering acidity for a breezy, thoroughly refreshing finish. <br><br> <b>Viticulture Notes:</b><br> The 2021 growing season was dry with budbreak in early March. Harvest began in early August. The resulting grapes were picked at the optimal ripeness while still maintaining their natural acidity. <br><br> <b>Winemaking Notes:</b><br> We harvested our Sauvignon Blanc at the optimal sugar levels to showcase the bright citrus character of the variety. Once at the winery, we whole-cluster pressed, then fermented slowly at cool temperatures in stainless steel to preserve the distinct floral and fruit notes. After fermenting each lot separately, we selected just the right combination to offer bright, juicy character and crisp acidity. We refrained from any oak exposure or malolactic fermentation.

The finish is long and precise, a mouth-watering sip that makes this an excellent pairing with food. <br><br> <b>VITICULTURE NOTES</b><br> The 2022 growing season was cool and long, offering optimal conditions for ripening while preserving excellent acidity. A wet winter gave soils ample water resources for the season ahead. Spring arrived with ideal conditions, giving us wonderful fruit set and healthy yields. Summer was dry and lengthy, allowing fruit to hang on the vines while ripening slowly. Grapes were harvested later than usual, delivering fruit with flavor maturity and concentration while retaining pure fruit expression. <br><br> <b>WINEMAKING NOTES</b><br> We source the fruit for this wine exclusively from Marlborough. Composed from up to 100 small lots from select sites across the region gives Whitehaven a backbone of bright fruit character, well balanced texture and a food-friendly finish. Our Sauvignon Blanc grapes were harvested in cool conditions between late March and early April, then pressed immediately with minimal skin contact. After cold settling, the clear juice was fermented entirely in stainless steel tanks at very low temperatures with select yeast strains to preserve the inherent varietal characteristics and classic Marlborough flavors. Wines sat on light yeast lees in tank for up to six weeks before blending.
