The 2018 Edna Valley Central Coast Cabernet Sauvignon reveals layers of blackberry and dark cherry that meet hints of black tea and spice. On the nose, aromas of ripe boysenberry and vanilla emerge from the glass. The smokiness of grilled portobello mushrooms, steak and braised beef pair well with the balanced acidity and structured tannins of our Cabernet Sauvignon. NOTES FROM THE WINEMAKER: We source our Cabernet grapes from the Central Coast for their deeply concentrated flavor, dark characteristics and distinct acidity. During the 2018 growing season, spring temperatures were particularly cool until summer hot spells arrived, sending the growing season into high activity. Despite the warm temperatures, harvest began 10 days later than in recent years. Rain in early October had no effect on the grapes. The 2018 harvest produced higher-than-usual yields of exceptional fruit with deep color and concentration. After an early morning harvest, the grapes fermented rapidly in the winery with three daily pump-overs to extract color and flavor. Once fermented to dry, we pressed the must and completed malolactic fermentation on French oak to impart a soft, round mouthfeel. Each lot was tasted daily during fermentation and specifically selected to craft this layered wine.

Each dime has lived through at least 76 years of history while winemaking in the Napa Valley has existed longer. This wine brings those together in a unique way—a synthesis à la Orin Swift. We are extremely fortunate and lucky to have access to vineyards of excellent pedigree . This vintage of Mercury Head is comprised of Cabernet Sauvignon from the Stagecoach, Emerson Day and Morisoli vineyards with a small percentage from the historic Monte Rosso vineyard overlooking Sonoma Valley that was too good to leave out. Together, they combine to create a wine of intensity , nuance and complexity , worthy of our flagship wine. WINEMAKER’S NOTES: The upfront aromatics of the wine transports one to the Cabernet Sauvignon vineyards listed above during harvest; notes of ripe and crunchy blackcurrant means it’s almost time to pick. The nose of the 2019 Mercury Head has a concentrated dose of that aroma along with some redcurrant, fresh thyme, sandalwood and garrigue. Profound, yet classic, the palate expresses blackberry and raspberry preserves, a touch of rhubarb and toffee with some black tea and licorice accents . A final hint of chocolate covered espresso bean and ultra-soft tannins frames the extensive finish.

Our 2018 Chateau Souverain Merlot opens with dark red fruit aromas reminiscent of black cherry and plum. On the palate, notes of fresh blueberries are complemented by dashes of spice and shaved baking chocolate. The wine finishes with soft acidity and a fruit-driven balance that creates a polished sense of elegance. To extract full color and flavor intensity from the Merlot, we kept the skins on the grapes for 10-14 days. Each lot was then gently pressed into a tank for malolactic fermentation. After carefully assessing the quality of the separate wines, the best lots were judiciously blended to maintain their classic Merlot profile, then aged on French and American oak before final blending.
