Our 2020 Louis M. Martini Sonoma County Cabernet Sauvignon is an elegant expression of Dry Creek and Alexander Valley. Our Edna Valley Vineyard Cabernet Sauvignon has aromas of ripe boysenberry complemented by hints of vanilla and cocoa. On the palate, this wine has fresh blackberry, blueberry and red cherry characteristics rounded out by hints of dried oregano and molasses. Balanced acidity and structured tannins give this wine a finish that pairs well with a variety of foods, including filet mignon or summer barbecue favorites such as smoked ribs, ribeye steak and tri-tip.
Smith & Hook Reserve Cabernet Sauvignon V19 750ML

The deep purple-ruby in the glass, this Reserve is fragrant and beautifully defined on the nose with aromas of macerated dark cherries, rich cassis, and candied violets which are further complexed with plum, dried herbs and cedar forest floor accents. The palate is youthful and vibrant, bursting with black and blue fruits, plum, along with notes of warm fig and dark chocolate shavings. This wine is creamy textured, with seamlessly integrated fine tannins and brisk minerality that brings together all the layers in a long succulent finish. <br><br> The 2019 growing season in Paso Robles had about average rainfall and plenty of sunshine. Going into veraison, consistently warm, mild temperatures during the day and coastal influences with cooler temperatures at night were ideal for development of full canopy and full clusters. The late season had a few typical heat spikes that slowed down the vine growth, but enhanced flavors and sugar accumulation in the fruit. <br><br> The fruit for this Reserve is sourced mostly from Truesdale vineyard in Paso Robles. The well-drained arbuckle and sandy loam soils combined with the vineyard’s deep inland location at 1,560 ft elevation and south-facing slope create the ideal terroir for intensely flavored wines with depth of flavor, excellent structure and naturally balanced acidity. <br><br> Fruit was harvested in the cool morning and brought to the winery. The grapes were destemmed, sorted and delivered to large stainless-steel tanks. Wine was fermented on the skins in small lots with 5% barrel fermented. Fermentation was managed by pump overs for maximum extraction of color and flavor. The lots were then individually pressed on the skins and settled before transferring into French oak barrels, where the wine was aged for 20 months.

The historic Monte Rosso Vineyard is one of California’s oldest Cabernet Sauvignon plantings that dates back to 1880. Located in the Moon Mountain subregion of Sonoma Valley, it sits in the shadow of the Mayacama mountain range at 1,300 feet above sea level. This beautifully balanced Cabernet Sauvignon is made from select lots from within this amazing vineyard. Deep ruby in color, this wine leads with aromas of red currants, warmed cherry cobbler, sandal wood, cardamon, and vanilla oak. When we decided not to make Mercury Head in 2020, the anticipation for the next release was palpable. In the cellar, we were giddy, ready to assemble a blend worthy of the famed dimes. The 2021 vintage was fortuitous in both yield and quality, giving us a lot of components to make trial blends with. We’re very excited to bring back Mercury Head as 100% Cabernet Sauvignon sourced from both the Stagecoach and Warnock Vineyards on Atlas Peak, the Morisoli Vineyard in Rutherford and the Taplin Vineyard in St. Helena. <br><br> <b>WINEMAKER’S NOTES</b><br> An almost-black, opaque garnet core sit s in the glass with slow-moving tears falling down the sides. Immediate aromatic notes of ripe cassis, charred ribeye, sandalwood and freshly cut oak pilfer—breathe deeper for more. The first sip is a complex, layered conundrum of blackberry, black plum, fennel, licorice and dark chocolate. More sips peel back the layers to reveal a rich and balanced wine with a deep cassis core. A sweet linger on the finish closes the wine with softly textured chalky tannins.

The 2019 Alexander Valley Cabernet Sauvignon is a full-bodied wine grown along the meandering Russian River. Pronounced aromas of brambleberry, crushed dried herbs and violet rise from the glass. Our 2021 Apothic Cab captures the best of Cabernet Sauvignon, bringing a silky, elegant and delicate dimension to the typically bold characteristics of the variety. This wine showcases Cabernet Sauvignon’s distinctive fruit characteristics of blueberry, blackberry jam and dark plum, supported by soft, fine tannins that add plush richness to the mouthfeel. A small addition of Zinfandel to the wine adds layers of cherry and dark fruit notes as well as a hint of spice. Subtle suggestions of vanilla linger on the smooth finish, a reflection of the wine’s selective oak aging..<br><br> <b>Viticulture Notes:</b><br>We selected the majority of the grapes for Apothic Cab from Lodi in California’s Delta region. California’s 2021 growing season was cool and mild, with a heat spell in August that resulted in an earlier than average harvest. Wines from this vintage showcase vibrant acidity and concentrated flavors.<br><br> <b>Winemaking Notes:</b><br>We selected Cabernet Sauvignon grapes with the most intense fruit profile and the finest tannins, handling fruit with a soft touch in the cellar. We added a small portion of Zinfandel to the blend to complement the wine’s uniquely approachable palate and add additional dark and jammy characteristics. After harvest, fruit was destemmed with marginal crushing to gently extract color and tannins. Portions of the blend were aged on oak for two to four months to preserve elegant fruit notes and impart hints of vanilla.

The 2021 Wild Horse Cabernet Sauvignon has dark cherry aromas with hints of vanilla bean, coconut and warm spices. Full bodied wine with sweet black fruit flavors, tea leaves and toasted oak. It has fine tannins and a pleasant astringency. The finish is long and smooth. <br><br> <b>VITICULTURAL NOTES</b><br> We chose the El Pomar and San Miguel Districts as the source for our Cabernet Sauvignon, as they are the best sub-AVAs Paso Robles offers for this variety. Sunnybrook Vineyard’s predominantly Arbuckle Complex soils are composed of well-drained clay and are ideal for Cabernet. A former cattle ranch situated on rolling, golden hills among ancient oak trees, Sunnybrook is planted to various clones and rootstocks and possesses a unique blend of terroir within the ranch itself. The balance of fruit was sourced from our smaller San Miguel Vineyard, situated near the Salinas River. Wide-open and flat, San Miguel provided an excellent juxtaposition to Sunnybrook, with loamy, sandy soils from the Hanford and Greenfield series. <br><br> <b>WINEMAKING NOTES</b><br> Tried to let the fruit hang as long as needed to achieve the optimal flavors. The grapes were harvested in early morning, at the coolest time of the day. Then they were destemmed and crushed to tank were they fermented on skins until the optimal amount of tannin and flavor had been extracted. The wine was then pressed off of skins and aged in oak until the optimal flavors had been extracted before proceeding to being blended.
