The 2018 Edna Valley Central Coast Cabernet Sauvignon reveals layers of blackberry and dark cherry that meet hints of black tea and spice. On the nose, aromas of ripe boysenberry and vanilla emerge from the glass. The smokiness of grilled portobello mushrooms, steak and braised beef pair well with the balanced acidity and structured tannins of our Cabernet Sauvignon. NOTES FROM THE WINEMAKER: We source our Cabernet grapes from the Central Coast for their deeply concentrated flavor, dark characteristics and distinct acidity. During the 2018 growing season, spring temperatures were particularly cool until summer hot spells arrived, sending the growing season into high activity. Despite the warm temperatures, harvest began 10 days later than in recent years. Rain in early October had no effect on the grapes. The 2018 harvest produced higher-than-usual yields of exceptional fruit with deep color and concentration. After an early morning harvest, the grapes fermented rapidly in the winery with three daily pump-overs to extract color and flavor. Once fermented to dry, we pressed the must and completed malolactic fermentation on French oak to impart a soft, round mouthfeel. Each lot was tasted daily during fermentation and specifically selected to craft this layered wine.
