Deep, intensely flavorful and velvet-smooth, our 2020 Apothic Crush is a luscious Red Blend brimming with appealing fruit character. Ripe black cherry, wild blackberry and raspberry fruit notes are layered on the inviting palate with toffee and milk chocolate. The long, lingering finish adds hints of rich, silky caramel. A blend of Petite Sirah, Pinot Noir and Zinfandel, this is a Crush that demands to be shared.

Viticulture Notes
We selected the majority of the grapes for Apothic Crush from Lodi and other bold regions in California’s Central Valley. Lodi is known as a producer of intensely concentrated, silky textured fruit. California’s 2020 vintage experienced a cool, mild growing season with an accelerated heat spell in August, resulting in early ripening. Vintage 2020 in California shows vibrant acidity and concentrated flavors.

Winemaking Notes
We harvested a majority of the grapes for our Apothic Crush at night in cool temperatures to preserve the character of the fruit. The Pinot Noir was cold soaked for 1-2 days, then fermented between 80° to 85°F. The other varieties were fermented between 86° to 90° F. To create a silky mouthfeel and toasted caramel characteristics, we aged the blend in a mixture of French and American oak.

It's rare to find a wine from the Napa Valley composed of all five Bordeaux-style varietals, but for many years, that has been Papillon's focus. The raw strength and prestige of Cabernet Sauvignon buttressed by the opulence of Merlot, the spiciness of Cabernet Franc, the depth of Malbec and the sheer unctuousness of Petit Verdot come together seamlessly. The 2021 Papillon is sourced from Napa Valley growers we've worked with for decades-Stagecoach Vineyard, Indian Joe, Morisoli Vineyard and even a touch from the Monte Rosso Vineyard over on Moon Mountain, just to name a few.

Our good friend and fellow winemaker, Greg Gorman, photographed the label.

The 2021 Papillon fills the glass with an unmistakable dark crimson, a flash of neon purple and a ruby rim. Tears move glacially and the wine opens with aromatics of boysenberry jam, violets, chocolate covered blueberry and hints of Cara Cara rind, graphite and brioche. The entry and mid-palate are bright throughout with considerable weight-tones of cassis, blackberry and baking spices flourish. Enveloping texture, chalky, drying tannins and an enduring finish bows out the wine.

In the famed book, The Count of Monte Cristo, protagonist Edmond Dantes arrives to Marseille on a ship named ‘Pharaon.’ The word’s etymological roots and context since inspired Dave Phinney’s philosophy and the reserve wine for Department 66. Aromas of sweet oak, dark chocolate liqueur and Tahitian vanilla are complemented by ripe plum and herbal sage notes. Savory red fruit flavors of boysenberry and rhubarb fill the palate and blend with a glimpse of schist and minerality. Firm tannins are primed for extended aging while lingering acidity extends the finish across the palate.

The 2021 Apothic Red is a rich Zinfandel-led Red blend with red silky, smooth layers of black cherry, boysenberry and black pepper. Syrah and Merlot add intriguing notes of ripe blueberry and boysenberry, while a mix of other red varieties add dimension and depth with hints of spice. Soft and plush on the palate, the long finish brings vanilla and mocha characteristics, a reflection of the selective oak aging used to enhance and support the wine’s elegant appeal.

Viticulture Notes
We selected the majority of the grapes for Apothic Red from the Lodi and Central Valley areas in California. We sourced the Zinfandel from Lodi, a premium producer of intensely concentrated, silky textured fruit. California’s 2021 growing season was cool and mild, excellent conditions for developing mature, layered fruit. A heat spell in August resulted in an earlier than average harvest. Wines from this vintage showcase vibrant acidity and concentrated flavors.

Winemaking Notes
Red was our first Apothic release: a daringly bold and original blend of California-grown red grapes that created a phenomenon. Grapes for 2021 Apothic Red were de-stemmed, with a portion selected for whole-cluster fermentation. We fermented the wine for five to seven days in a combination of cone-sweep and upright tanks at a temperature averaging 85-88°F. Across all lots, we exercised meticulous temperature control to maximize the extraction of color and dark fruit notes.

The Gravity Red Blend is named for a remote, hard-to-reach block on a lower slope of the Monte Rosso Vineyard. Its location on the edge of a canyon yields grapes with exceptional intensity. Decadent dark fruit notes of plum and black raspberry are balanced with a plethora of supporting players – hints of cinnamon, cedar, graphite and pepper add dimension and complexity to this strikingly rich red blend.

Blending trials for Machete are amongst the favorite for each vintage. A Petite Sirah-based wine, the trial tastings leave everyone with purple teeth and a puckered palate. It can also be the most exhausting. However, after various tastings and blend iterations, the 2020 Machete is true to the style of being approachable for the highly tannic and visceral varietal. Prominent vineyards across the state make up the blend including the Frei Ranch, Barrelli, Snows Lake, Monte Rosso, Dark Horse, Stones Throw, Zaca Mesa and Summerwind vineyards.

A dark mauve core with a neon purple rim, the wine stains everything. Opening aromatics on the 2020 Machete are gorgeous immediately: ripe pluot, carne asada, new cowboy boots, lilacs, espresso bean and wet concrete. On the palate, layers upon layers reveal themselves, from a plum galette topped with fior di latte gelato to 85% cacao dark chocolate to barbequed tri-tip and sweet oak. Puckering tannins to finish, the wine closes on a high note with a touch of blood orange zest and lingering acidity.

sale price $22.99
TRE stands for its three grape varieties Sangiovese, Merlot and Cabernet Sauvignon as well as for its three Tuscan vineyards (Maremma, Castellina and Radda in Chianti). The assemblage is dominated by Sangiovese with 70 percent, but Merlot and Cabernet Sauvignon also bring their charm with 15% each. This well-structured, medium-bodied wine is aged for twelve months before it is bottled. Two thirds of the expansion takes place in French tonneaux and one in cement. This elegant, well-structured cuvée offers plenty of drinking pleasure now or later and goes well with every kitchen. “There is no better entry-level wine than this,” says Monica Larner (for Robert Parker) with reference to the TRE 2014. And James Suckling states: “Really delicious, really juicy, with wonderful aromas of red fruits.”

Ideal with: pasta and rice dishes, light roasted or sautéed meat, poultry, fried or grilled fish. Our favorite: with Vitello Tonnato with fresh capers.

The depth and complexity of this wine are immediately apparent with a rush of crushed black cherry, fraises des bois, and wild mushroom on the nose. The palate opens, layer upon plush layer, with raspberry, strawberry, and lingonberry, all held beautifully in focus by integrated polished tannins.

Jayson Red Wine is a distinctive blend from some of Napa Valley’s finest vineyards, crafted to express each vintage with intensity and richness. With vintage 2020, fruit was sourced primarily from Atlas Peak, supported by fruit grown in the renowned Stagecoach Vineyard and other exceptional Napa Valley sites. Grapes were hand-picked and hand-sorted before undergoing fermentation in stainless steel tanks to enhance its fruit profile and retain bright acidity. The wine was then racked to 65% new French oak barrels for 15 months of aging.

Apothic 2019 Inferno is a Red Wine with a Whiskey Soul. Aging some of the wine in whiskey barrels adds an intriguing dimension of maple and spice to Inferno’s dark layers of black plum and blackberry. The palate intensifies with notes of dried cherry and toasty vanilla, then leads to a long, warm finish.

Viticulture Notes
The 2019 growing season started later than usual in California. Spring rain and cooling temperatures extended ripening time for the grapes. As a result, the grapes ripened more slowly and developed full flavors and acidity. Harvest 2019 produced slightly lower yields of fruit with concentrated flavor and optimal balance.

Winemaking Notes
Apothic Inferno is first oak aged 2-4 months, then aged an additional 60 days in whiskey barrels to give a unique flavor profile that is expressed in the bottle.

Being stranded in a desert leaves a lot to be desired — how to get back home, where to find food, water and shelter, and thoughts of survival. For eight years in the early 2010s, Orin Swift Cellars was barred from making any Zinfandel wines. From the grape that started everything OSC, the ‘desert’ gave us an opportunity to explore the diverse range of California’s grape varietals. But, as soon as those eight years were up, we had a plan in place to pay homage to our home. The 2021 Eight Years in the Desert marks the sixth iteration of our return to the world of Zinfandel.

A deep maroon core with a ruby rim, the 2021 Eight Years in the Desert opens with aromas of wild blackberry, pepper, oatmeal raisin cookie, Sequoia forest floor, bay leaf and spices. The entry is broad and opulent with a mid-palate of brambly raspberry, black cherry, ripe blueberry and a hint of cacao. The wine has superb length through the finish with ripe tannins and a close of sweet oak.
