We have chosen to showcase the Rhône varieties Texas has been making a name for as of late. Lost Draw Vineyards, located within the Texas High Plains AVA, is a premier site in Texas with red clay and sandy soils, planted to the warm-climate varieties of France and Spain. Texas may be relatively new to America’s longstanding winemaking history, but the quality of farming and fruit from this vineyard promise quality examples of Texas terroir for years to come. <br><br> <b>Blend</b><br> 61% Mourvèdre, 15% Carignan, 15% Cinsault, 9% PS <br><br> <b>Winemaker Notes</b><br> A beautiful dusty plum hue sits in the glass with bursting aromas of black plum and raspberries, floral notes of lilac and rose complemented by hints of cedar, black tea and slate. On the palate, notes of red fruits, cranberries, grapefruit and cherry cola sync with a bright and fresh acidity—a lively finish that lingers. <br><br> <b>Aging</b><br> Maturation Barrel aged in neutral French oak for 10 months prior to release.

In the famed book, The Count of Monte Cristo, protagonist Edmond Dantes arrives to Marseille on a ship named ‘Pharaon.’ The word’s etymological roots and context since inspired Dave Phinney’s philosophy and the reserve wine for Department 66. Aromas of sweet oak, dark chocolate liqueur and Tahitian vanilla are complemented by ripe plum and herbal sage notes. Savory red fruit flavors of boysenberry and rhubarb fill the palate and blend with a glimpse of schist and minerality. Firm tannins are primed for extended aging while lingering acidity extends the finish across the palate.

The 2020 Apothic Red is our first daringly original blend of California-grown red grapes. Zinfandel leads the blend with silky layers of blackberry, black cherry with a hint of black pepper. Syrah and Merlot deliver undercurrents of ripe blueberry, boysenberry and a soft, plush mouthfeel. Cabernet Sauvignon adds more dimension with notes of black currant while bold tannins deliver a hint of intrigue. The finish is long and smooth with lingering notes of vanilla and mocha from the oak we selected for aging. <br><br> <b>Viticulture Notes:</b><br> We selected the majority of the grapes for Apothic Red from the Lodi and Central Valley areas in California. We sourced the Zinfandel from Lodi, a premium producer of intensely concentrated, silky textured fruit. California’s 2020 vintage experienced a cool, mild growing season with an accelerated heat spell in August, resulting in early ripening. Vintage 2020 in California shows vibrant acidity and concentrated flavors. <br><br> <b>Winemaking Notes</b><br> The grapes were de-stemmed before some whole-cluster fermentation. We fermented the 2020 Apothic Red in a combination of cone-sweep and upright tanks ranging from 4 to 6 days at a temperature averaging 85-88°F. Across all lots, we exercised meticulous temperature control and managed heat spikes through fermentation where needed to maximize the extraction of color and dark fruit notes.

Petite Sirah, Pinot Noir and Zinfandel lead the blend on the 2019 Apothic Crush, delivering a long, smooth finish. <br><br> <b>Viticulture Notes:</b><br> Vintage 2019 in California experienced cool temperatures that effectively lengthened the growing season and allowed the grapes to ripen gradually at lower sugars. Grapes from this harvest have concentrated flavor and optimal balance. <br><br> <b>Winemaking Notes:</b><br> We harvested a majority of the grapes for the 2019 Apothic Crush at night in cool temperatures to preserve the character of the fruit. The Pinot Noir was cold soaked for 2-3 days, then fermented between 80° to 85° F. The other varieties were fermented between 86° to 90° F. To create a silky mouthfeel and toasted caramel characteristics, we aged the blend in a mixture of French and American oak.

Bright, tart accents of pomegranate and dusts of spice add dimension while Zinfandel brings in a touch of licorice. The Zinfandel and Cabernet Sauvignon balance the dark fruit with some red and black currant characters, and both impart a more balanced, plush mouthfeel. <br><br> <b>Viticulture Notes:</b><br> The majority of the grapes for our Apothic Dark originated from the Lodi, California, region. Being stranded in a desert leaves a lot to be desired — how to get back home, where to find food, water and shelter, and thoughts of survival. For eight years in the early 2010s, Orin Swift Cellars was barred from making any Zinfandel wines. From the grape that started everything OSC, the ‘desert’ gave us an opportunity to explore the diverse range of California’s grape varietals. But, as soon as those eight years were up, we had a plan in place to pay homage to our home. The 2021 Eight Years in the Desert marks the sixth iteration of our return to the world of Zinfandel. <br><br> A deep maroon core with a ruby rim, the 2021 Eight Years in the Desert opens with aromas of wild blackberry, pepper, oatmeal raisin cookie, Sequoia forest floor, bay leaf and spices. The entry is broad and opulent with a mid-palate of brambly raspberry, black cherry, ripe blueberry and a hint of cacao. The wine has superb length through the finish with ripe tannins and a close of sweet oak.

The wine enters with class, being soft and lush, with notes of ripe plum, boysenberry and Santa Maria tri-tip. Grippy, chewy tannins, the wine closes with pleasing sarsaparilla and blackcurrant.

A true five-varietal Bordeaux blend is hard to find anywhere in the world. But lucky for us, we’ve been able to source all five across the Napa Valley to produce one of our flagship wines. From the mountain tops of Atlas Peak to the gravelly soils of St. Helena and everywhere in between, the resulting blend elicits a dialectic found on the label: a butterfly may be delicate and elegant while the hands of a farmer are anything but. Similarly, the sensory introduction to Papillon is overwhelming and breathtaking; yet, as the wine opens, it transforms slowly into a wine of elegance and opulence in one. It is truly the epitome of our style of winemaking. <br><br> The 2019 Papillon pours a neon crimson and settles into a dark core with a ruby rim—crimson through and through. Aromatically, the wine opens with powerful notes of blackberry, kirsch, coastal sagebrush and evolves into ripe pluot and roasted fig. An enveloping entry of grandeur, the palate reveals a more elegant side of the wine: black plum, blackcurrant, toffee and trace hints of sweet red vermouth, muddled mint, and orange peel. Polished, balanced and with an imagined sweetness, the wine closes with ripe but firm tannin and a mild drying character, capable of converting even the staunchest of Bordeaux-philes.
