Tornatore Etna Rosso is ruby red with faint purple color, a typical trait of the Nerello Mascalese variety, which is not known for rich color. California’s 2021 growing season was cool and mild, with a heat spell in August that resulted in an earlier than average harvest. Wines from this vintage showcase vibrant acidity and concentrated flavors. <br><br> <b>Winemaking Notes</b><br> We harvested a majority of the grapes for the Apothic Dark at night in cool temperatures to preserve the character of the fruit, then we fermented the varieties between 88° to 90°F. The blend, primarily Petite Sirah and Teroldego with other dark-skinned varieties in support, was crafted to showcase a silky mouthfeel with hints of dark chocolate and spice.

2020 Apothic Inferno is a <i>Red Wine with a Whiskey Soul.</i> Aging some of this Zinfandel-and-Merlot-led blend in whiskey barrels adds intriguing dimensions of maple and spice to Inferno’s dark, velvety-smooth layers of dried blackberries, black plum and cherry. Plush and rich on the mouth, well-integrated tannins add texture and structure while hints of toasty vanilla and cocoa linger on the long, warm finish. <br><br> <b>Viticulture Notes</b><br> We sourced fruit for our bold Inferno blend primarily from California, mainly from Lodi and the Central Valley, with a portion of the blend grown in Washington’s Horse Heaven Hills and Columbia Valley regions. California’s 2020 vintage experienced a cool, mild growing season with a heat spell in August that resulted in early ripening. In Washington, typically low rainfall and moderate temperatures yielded fruit with the vibrant acidity and layered structure that the state is known for producing. Overall, vintage 2020 grapes show concentrated, mature flavor development and incredible structure. <br><br> <b>Winemaking Notes</b><br> Grapes for Apothic Inferno were harvested and de-stemmed, then fermented for an average of four to six days in a combination of cone-sweep and upright tanks. The wine is then oak aged for three to six months, then aged an additional 60+ days in whiskey barrels, giving Apothic Inferno its unique flavor profile.

California’s 2021 growing season was cool and mild, with a heat spell in August that resulted in an earlier than average harvest. Wines from this vintage showcase vibrant acidity and concentrated flavors. <br><br> <b>Winemaking Notes</b><br> We harvested a majority of the grapes for our Apothic Crush at night in cool temperatures to preserve the character of the fruit. The Pinot Noir was cold soaked for up to two days, then fermented between 80° to 85°F. The other varieties were fermented between 86° to 90° F. To create a silky mouthfeel and toasted caramel characteristics, we aged the blend on a mixture of French and American oak to add soft notes of vanilla, cocoa and caramel.

In the famed book, The Count of Monte Cristo, protagonist Edmond Dantes arrives to Marseille on a ship named ‘Pharaon.’ The word’s etymological roots and context since inspired Dave Phinney’s philosophy and the reserve wine for Department 66. Aromas of sweet oak, dark chocolate liqueur and Tahitian vanilla are complemented by ripe plum and herbal sage notes. TRE stands for its three grape varieties Sangiovese, Merlot and Cabernet Sauvignon as well as for its three Tuscan vineyards (Maremma, Castellina and Radda in Chianti). Our 2021 Hahn Appellation Series Arroyo Seco GSM is ruby red in color, this wine bursts with aromas of strawberry and blueberry with a touch of lavender and white pepper. On the palate, layers of cherry, blueberry, blackberry and warm spice are complemented by a round mouthfeel and velvety tannins. <br><br> <b>VINEYARDS</b><br> Grapes for this wine are sourced from vineyards in the Arroyo Seco appellation of Monterey County. Located south of the Santa Lucia Highlands, these vineyards sit on a gravelly alluvial plain with rocky soils that foster excellent drainage. Arroyo Seco, one of the smallest AVAs in California, is a hidden gem, boasting one of the longest growing seasons in the state. Cool winds channeling South from Monterey Bay through the Salinas Valley ensure gradual ripening, full development of vibrant fruit flavors and bright acidity. <br><br> <b>WINEMAKING</b><br> Picked late in the evening, the grapes were destemmed into stainless steel tanks for fermentation. The wine was pumped over several times a day for maximum color, aromatics and flavor extraction. After about two weeks the wine was pressed off the skins, settled and racked into French oak barrels to age for 11 months.

Wines from this vintage showcase vibrant acidity and concentrated flavors. <br><br> <b>Winemaking Notes</b><br> Red was our first Apothic release: a daringly bold and original blend of California-grown red grapes that created a phenomenon. Grapes for 2021 Apothic Red were de-stemmed, with a portion selected for whole-cluster fermentation. We fermented the wine for five to seven days in a combination of cone-sweep and upright tanks at a temperature averaging 85-88°F. Across all lots, we exercised meticulous temperature control to maximize the extraction of color and dark fruit notes.

There's a perfect window when picking Zin-pick it too early and you end up with a thin, "green" wine; pick it too late and you risk a stuck fermentation; pick it just right...well, that's our goal. Sourced from vineyards of pedigree, such as Stefani, Barrelli and Monte Rosso, the sixth iteration exudes the ethos of Eight Years in the Desert: a heart and body of Zinfandel with added nuance and complexity from Petite Sirah and Syrah-the quintessential California Red Wine. <br><br> <b>WINEMAKER'S NOTES</b><br> At first glance, the 2022 Eight Years in the Desert looks to be almost black, but after closer inspection, a dark crimson starts to shine through with a tinge of purple on the rim. The nose is rife with notes of ripe blueberry, black plum, wild raspberry, espresso bean, sweet oak and a hint of crème de menthe and cedar. The entry is akin to walking through a tunnel of velvet walls with blackberry jam, reduced strawberry and a touch of rhubarb. Bright acidity throughout the palate, the wine closes with round, ripe tannins, fresh pluot and dark chocolate.
