Vintage 2021 began with cool, occasionally wet conditions that persisted through spring. By summer, warm, sunny days and crisp, cool nights emerged, allowing grapes to develop layered flavors while maintaining region’s signature crisp structure. An early harvest brought bright, mature fruit into the cellar.

Winemaking Notes
The grapes were harvested at night in cool temperatures to preserve their vibrant fruit characteristics, then destemmed and pressed immediately with minimal skin contact into stainless steel tanks. A long, slow fermentation was carried out over three weeks at cool temperatures using various yeast strains to lend complexity, enhance fruit expression and maintain the classic Marlborough character. Each block was kept separate throughout the winemaking process, allowing different parcels to blend into Nobilo’s signature style.

These ideal conditions allowed for ideal flavor development coupled with the region’s signature crisp structure. Harvest was early, with clean, bright, flavorful fruit coming into the cellar.

Winemaking Notes
Sauvignon Blanc grapes were de-stemmed and lightly membrane pressed, not crushed, to avoid extracting bitter notes from the skins and seeds. The juice was fermented in upright stainless-steel tanks at low temperatures for 21 days to preserve the bright fruit characteristics, then left on light lees during maturation. The wine was then filtered prior to bottling.

A wet winter gave soils ample water resources for the season ahead. Spring arrived with ideal conditions, giving us wonderful fruit set and healthy yields. Summer was dry and lengthy, allowing fruit to hang on the vines while ripening slowly. Grapes were harvested later than usual, delivering fruit with flavor maturity and concentration while retaining pure fruit expression.

WINEMAKING NOTES
We source the fruit for this wine exclusively from Marlborough. Composed from up to 100 small lots from select sites across the region gives Whitehaven a backbone of bright fruit character, well balanced texture and a food-friendly finish. Our Sauvignon Blanc grapes were harvested in cool conditions between late March and early April, then pressed immediately with minimal skin contact. After cold settling, the clear juice was fermented entirely in stainless steel tanks at very low temperatures with select yeast strains to preserve the inherent varietal characteristics and classic Marlborough flavors. Wines sat on light yeast lees in tank for up to six weeks before blending.
