Tornatore Etna Rosso is ruby red with faint purple color, a typical trait of the Nerello Mascalese variety, which is not known for rich color. California’s 2021 growing season was cool and mild, with a heat spell in August that resulted in an earlier than average harvest. Wines from this vintage showcase vibrant acidity and concentrated flavors. <br><br> <b>Winemaking Notes</b><br> We harvested a majority of the grapes for the Apothic Dark at night in cool temperatures to preserve the character of the fruit, then we fermented the varieties between 88° to 90°F. The blend, primarily Petite Sirah and Teroldego with other dark-skinned varieties in support, was crafted to showcase a silky mouthfeel with hints of dark chocolate and spice.

Lodi is known as a producer of intensely concentrated, silky textured fruit. California’s 2020 vintage experienced a cool, mild growing season with an accelerated heat spell in August, resulting in early ripening. Vintage 2020 in California shows vibrant acidity and concentrated flavors. <br><br> <b>Winemaking Notes</b><br> We harvested a majority of the grapes for our Apothic Crush at night in cool temperatures to preserve the character of the fruit. The Pinot Noir was cold soaked for 1-2 days, then fermented between 80° to 85°F. The other varieties were fermented between 86° to 90° F. To create a silky mouthfeel and toasted caramel characteristics, we aged the blend in a mixture of French and American oak.

The deep purple-ruby in the glass, this Reserve is fragrant and beautifully defined on the nose with aromas of macerated dark cherries, rich cassis, and candied violets which are further complexed with plum, dried herbs and cedar forest floor accents. The palate is youthful and vibrant, bursting with black and blue fruits, plum, along with notes of warm fig and dark chocolate shavings. This wine is creamy textured, with seamlessly integrated fine tannins and brisk minerality that brings together all the layers in a long succulent finish. <br><br> The 2019 growing season in Paso Robles had about average rainfall and plenty of sunshine. Going into veraison, consistently warm, mild temperatures during the day and coastal influences with cooler temperatures at night were ideal for development of full canopy and full clusters. The late season had a few typical heat spikes that slowed down the vine growth, but enhanced flavors and sugar accumulation in the fruit. <br><br> The fruit for this Reserve is sourced mostly from Truesdale vineyard in Paso Robles. The well-drained arbuckle and sandy loam soils combined with the vineyard’s deep inland location at 1,560 ft elevation and south-facing slope create the ideal terroir for intensely flavored wines with depth of flavor, excellent structure and naturally balanced acidity. <br><br> Fruit was harvested in the cool morning and brought to the winery. The grapes were destemmed, sorted and delivered to large stainless-steel tanks. Wine was fermented on the skins in small lots with 5% barrel fermented. Fermentation was managed by pump overs for maximum extraction of color and flavor. The lots were then individually pressed on the skins and settled before transferring into French oak barrels, where the wine was aged for 20 months.

2020 Apothic Inferno is a <i>Red Wine with a Whiskey Soul.</i> Aging some of this Zinfandel-and-Merlot-led blend in whiskey barrels adds intriguing dimensions of maple and spice to Inferno’s dark, velvety-smooth layers of dried blackberries, black plum and cherry. Plush and rich on the mouth, well-integrated tannins add texture and structure while hints of toasty vanilla and cocoa linger on the long, warm finish. <br><br> <b>Viticulture Notes</b><br> We sourced fruit for our bold Inferno blend primarily from California, mainly from Lodi and the Central Valley, with a portion of the blend grown in Washington’s Horse Heaven Hills and Columbia Valley regions. California’s 2020 vintage experienced a cool, mild growing season with a heat spell in August that resulted in early ripening. In Washington, typically low rainfall and moderate temperatures yielded fruit with the vibrant acidity and layered structure that the state is known for producing. Overall, vintage 2020 grapes show concentrated, mature flavor development and incredible structure. <br><br> <b>Winemaking Notes</b><br> Grapes for Apothic Inferno were harvested and de-stemmed, then fermented for an average of four to six days in a combination of cone-sweep and upright tanks. The wine is then oak aged for three to six months, then aged an additional 60+ days in whiskey barrels, giving Apothic Inferno its unique flavor profile.

Our 2021 Clos du Bois Pinot Noir is an approachable, medium-bodied red wine from California. Aromas of cherry and vanilla bean rise from the glass with a touch of anise. This wine brims with layers of sweet cherry, strawberry and raspberry with a silky mouthfeel. Ribbons of toasted oak and caramel underscore the fruit, leading to a long finish. <br><br> <b>Viticulture Notes</b><br> This elegant Pinot Noir is sourced from select vineyards in some of California’s most renowned growing regions. The 2021 growing season experienced a warm spring, which brought on early budbreak. Dry conditions served to further reduce crops size. However, anticipated diurnal temperature shifts kept the fruit from ripening too quickly and allowed it to develop slowly and evenly. <br><br> <b>Winemaking Notes</b><br> We prefer to harvest our Pinot Noir in the cool early morning hours, which helps preserve the inherent fruit character of the grapes. After it is delivered to the winery, we gently destem and send mostly whole berries directly to stainless steel fermenters to be cold soaked at 60-65°F for up to 2 days. During primary fermentation, we meticulously managed the extraction on skins to capture a silky tannin structure. To create subtle hints of vanilla and toasted oak, we racked the wine onto oak and let it age for 3-4 months. Individual lots were then chosen and combined to create the final blend.

A focus on geographic diversity has been a principle of ours or many years. Sourcing grapes from across California gives us the flexibility to produce wines when some regions are affected by forces outside of our control. But when the entire state experiences a great vintage, the diversity can sometimes be a problem…a good problem. Extensive tastings of trial blends are difficult when each blend is great for specific reasons. But in the end, we all agreed on the blend in front of you, comprised of fruit from across California — Sonoma Coast, Santa Lucia Highlands, Sta. Rita Hills and many more. <br><br> <b>WINEMAKER’S NOTES</b><br> Crisp crimson in the glass, the 2021 Slander opens with notes of wild strawberry, pomegranate, Bing cherry and cedar. Secondary aromatics abound, with hints of redwood grove underbrush, white pepper and earth. Delicate on entry, the palate is flooding with red plum, cherry cola, rhubarb and spices. A touch of cocoa powder on the finish, the wine closes with confident acidity and length.

The mouthfeel is silky, leading to a long finish with touches of pomegranate and vanilla bean. <br><br> <b>About The Region</b><br> Some of the most renowned winegrowing regions of Argentina are in Mendoza, a province in the western Cuyo region. Tucked under the massive shoulders of the Andes Mountains, the vines thrive in desert conditions quenched by mineral-rich snowmelt. Altitudes from 3,000 to 5,000 feet surround the vines in cool temperatures, crisp mountain air and sunlight that helps produce the bold flavor characteristics found in Mendoza-grown Malbec. <br><br> <b>Viticulture Notes</b><br> The 2021 harvest in Mendoza began with unseasonal frost in early October. This caused a slight reduction in crop size but was mitigated when warm weather kicked in and the regular diurnal temperature shifts came into play. Overall, the grapes were allowed to fully ripen on the vine, resulting in outstanding quality. <br><br> <b>Winemaking Notes</b><br> The grapes for our Malbec were hand harvested, de-stemmed and crushed. The must was cold soaked for 72 hours prior to fermentation, which occurred over seven days in both upright and conical tanks at a maximum temperature of 85°F. For optimal extraction of color and flavor, we used pump-overs and the skins were left in contact with the juice for up to 20 days. This wine was aged on a combination of French and American oak before bottling.

The 2022 Dark Horse Pinot Noir is a smooth, medium-bodied wine from California. Notes of Bing cherry and raspberry meet aromas of shaved cedar in this bright wine. A polished mouthfeel leads to a lingering finish with a touch of strawberry. <br><br> <b>Viticulture Notes</b><br> The 2022 growing season was warmer than normal with average crop yields. Increasing temperatures hastened harvest during August, which produced smaller yields of highly concentrated berries. <br><br> <b>Winemaking Notes</b></br> We harvested the grapes for this wine during the cool evening hours. Grapes were then brought to the winery, destemmed, and gently crushed before being fermented at temperatures of between 88°-92°F. This warmer fermentation served to further concentrate flavors and extract intense color from the skins. The wine was aged on oak post fermentation to add complexity and balance.
