California’s 2021 growing season was cool and mild, with a heat spell in August that resulted in an earlier than average harvest. Wines from this vintage showcase vibrant acidity and concentrated flavors. <br><br> <b>Winemaking Notes</b><br> We harvested a majority of the grapes for the Apothic Dark at night in cool temperatures to preserve the character of the fruit, then we fermented the varieties between 88° to 90°F. The blend, primarily Petite Sirah and Teroldego with other dark-skinned varieties in support, was crafted to showcase a silky mouthfeel with hints of dark chocolate and spice.

Syrah complements the dark cherry flavors with soft blueberry notes. A hint of Grenache adds intensity to the fruit expression, while the unique Graciano variety was blended in to brighten the acidity and add notes of red currant. The grapes were destemmed, lightly crushed and cold soaked overnight to encourage extraction of the fruit’s intriguing color and structure.

The 2021 Papillon is sourced from Napa Valley growers we've worked with for decades-Stagecoach Vineyard, Indian Joe, Morisoli Vineyard and even a touch from the Monte Rosso Vineyard over on Moon Mountain, just to name a few. <br><br><i>Our good friend and fellow winemaker, Greg Gorman, photographed the label.</i><br><br> The 2021 Papillon fills the glass with an unmistakable dark crimson, a flash of neon purple and a ruby rim. Tears move glacially and the wine opens with aromatics of boysenberry jam, violets, chocolate covered blueberry and hints of Cara Cara rind, graphite and brioche. The entry and mid-palate are bright throughout with considerable weight-tones of cassis, blackberry and baking spices flourish. Enveloping texture, chalky, drying tannins and an enduring finish bows out the wine.

The 2021 growing season was long, clear and cool, idyllic conditions to allow the fruit to ripen slowly and evenly, developing rich, layered flavors while maintaining incredible structure and balance. Overall quality in 2021 was outstanding.

A blend of Petite Sirah, Zinfandel, Pinot Noir and Grenache, this is a Crush that demands to be shared. <br><br> <b>Viticulture Notes</b><br> We searched California for the perfect selection of flavorful varieties for Apothic Crush, finding Lodi and other bold regions in California’s Central Valley an ideal spot for the majority of our grapes. Lodi-grown grapes are known for their intensely concentrated flavor profile and indulgently silky texture. California’s 2021 growing season was cool and mild, with a heat spell in August that resulted in an earlier than average harvest. Wines from this vintage showcase vibrant acidity and concentrated flavors. <br><br> <b>Winemaking Notes</b><br> We harvested a majority of the grapes for our Apothic Crush at night in cool temperatures to preserve the character of the fruit. The Pinot Noir was cold soaked for up to two days, then fermented between 80° to 85°F. The other varieties were fermented between 86° to 90° F. To create a silky mouthfeel and toasted caramel characteristics, we aged the blend on a mixture of French and American oak to add soft notes of vanilla, cocoa and caramel.

A polished mouthfeel leads to a lingering finish with a touch of strawberry. <br><br> <b>Viticulture Notes</b><br> The 2022 growing season was warmer than normal with average crop yields. Increasing temperatures hastened harvest during August, which produced smaller yields of highly concentrated berries. <br><br> <b>Winemaking Notes</b></br> We harvested the grapes for this wine during the cool evening hours. Grapes were then brought to the winery, destemmed, and gently crushed before being fermented at temperatures of between 88°-92°F. This warmer fermentation served to further concentrate flavors and extract intense color from the skins. The wine was aged on oak post fermentation to add complexity and balance.

This wine showcases Cabernet Sauvignon’s distinctive fruit characteristics of blueberry, blackberry jam and dark plum, supported by soft, fine tannins that add plush richness to the mouthfeel. A small addition of Zinfandel to the wine adds layers of cherry and dark fruit notes as well as a hint of spice. Subtle suggestions of vanilla linger on the smooth finish, a reflection of the wine’s selective oak aging..<br><br> <b>Viticulture Notes:</b><br>We selected the majority of the grapes for Apothic Cab from Lodi in California’s Delta region. California’s 2021 growing season was cool and mild, with a heat spell in August that resulted in an earlier than average harvest. Wines from this vintage showcase vibrant acidity and concentrated flavors.<br><br> <b>Winemaking Notes:</b><br>We selected Cabernet Sauvignon grapes with the most intense fruit profile and the finest tannins, handling fruit with a soft touch in the cellar. We added a small portion of Zinfandel to the blend to complement the wine’s uniquely approachable palate and add additional dark and jammy characteristics. After harvest, fruit was destemmed with marginal crushing to gently extract color and tannins. Portions of the blend were aged on oak for two to four months to preserve elegant fruit notes and impart hints of vanilla.
