Tucked under the massive shoulders of the Andes Mountains in west central Argentina, the province of Mendoza is renowned as a winegrowing region. The high-altitude desert vineyards their roll upward into the foothills and toward the steep Andes’ peaks. Altitudes in Mendoza range from 3,000 to 5,000 feet, and that altitude means clear air and more sunlight for building flavors in the grapes. At night, cold air sweeps down from the mountains to give the grapes the structure and complexity to balance perfectly with the intense flavors.

Dichotomous in nature, Papillon is our ode to the old world. A five varietal Bordeaux-blend, it is many things in one—an approachable yet ageable wine; a hedonistic yet nuanced wine; a piece of art yet just a bottle of wine. 2020 was a tough year in many respects with winemaking being the least of them. But the challenges of the growing season resulted in even more rigorous tastings and blending sessions. What has resulted is a wine worthy of the Papillon label. Sourced from across the Napa Valley, we incorporated fruit from several noteworthy vineyards—Morisoli, Taplin, Lewelling, Stagecoach, Indian Joe—and even from the Monte Rosso vineyard on Moon Mountain.

Our good friend and fellow winemaker, Greg Gorman, photographed the label.

WINEMAKER’S NOTES
The dark crimson core and brick rim sets the stage, as aromas of currant, blackberry, blue fruits, anise, lavender and brioche float from the glass. Enveloping and coating becomes mixed berry pie, sarsaparilla, cola and blackcurrant with structured heft through the mid-palate. Chalky tannins a la black tea or baking chocolate round out the wine with a pleasing finish of sweet oak.

THE VINTAGE
Rattlesnake Zinfandel is a tribute to the crest called Rattlesnake Hill, the highest point of the Monte Rosso Vineyard. It’s famous for the rattlesnakes living among the vines, seeking sunshine by day and coiling around the vines at night. Our deep, complex 2019 vintage opens with ripe notes of wild blackberry, black cherry, dark plum and crushed raspberry, layered with hints of baked fig, cinnamon toast, vanilla and dark chocolate spice cake. This full-bodied Zinfandel offers incredible depth, texture and structure, lifting the fruit notes through to the long, lingering finish.

VITICULTURE NOTES
This wine is crafted entirely from the historic Monte Rosso Vineyard, offering exceptional fruit with incredible concentration. The 2019 growing season was warm and evenly paced, offering ideal growing conditions. Winter rain led to a cool spring, which delayed budbreak. Late May delivered more rain but by June, warm, steady temperatures delivered consistent warmth that encouraged canopy growth and allowed the fruit to ripen gradually. Harvest 2019 produced low yields of small berries packed with rich, complex flavor characteristics.

WINEMAKING NOTES
We gave the grapes a two- to three-day cold soak to extract the desired foundation for color, flavor and structure. Fermentation took place in open-top tanks with up to 14 days of maceration time. All lots were aged separately until the blend was assembled and returned to barrel for flavors to integrate. Total barrel aging was 16 months in 100% French (30% new) oak, with the balance aging in neutral barrels.

This Zinfandel is a perfect match with wild game, Mediterranean-spiced lamb, salad dotted with dried fruit and creamy chevre.

VITICULTURE NOTES:
Our Zinfandel grapes were hand harvested in the early morning to keep the fruit in pristine shape. For this vintage, we selected fruit from Block 6 Zinfandel and a small portion of Petite Sirah from Block 3 and 11 on the Estate to dial up the fruit concentration.

WINEMAKING NOTES:
The grapes were cold soaked for 3 days prior to fermentation in open top fermenters. Following fermentation and gentle pressing, we chose to age this wine in a mix of French and American oak barrels for 6 months. French barrels add finesse and an elegant tannin structure while American brings the classic qualities of a California Zinfandel. Both add mesmerizing layers.
