Our 2021 Clos du Bois Pinot Noir is an approachable, medium-bodied red wine from California. Aromas of cherry and vanilla bean rise from the glass with a touch of anise. This wine brims with layers of sweet cherry, strawberry and raspberry with a silky mouthfeel. Ribbons of toasted oak and caramel underscore the fruit, leading to a long finish. Viticulture Notes This elegant Pinot Noir is sourced from select vineyards in some of California’s most renowned growing regions. The 2021 growing season experienced a warm spring, which brought on early budbreak. Dry conditions served to further reduce crops size. However, anticipated diurnal temperature shifts kept the fruit from ripening too quickly and allowed it to develop slowly and evenly. Winemaking Notes We prefer to harvest our Pinot Noir in the cool early morning hours, which helps preserve the inherent fruit character of the grapes. After it is delivered to the winery, we gently destem and send mostly whole berries directly to stainless steel fermenters to be cold soaked at 60-65°F for up to 2 days. During primary fermentation, we meticulously managed the extraction on skins to capture a silky tannin structure. To create subtle hints of vanilla and toasted oak, we racked the wine onto oak and let it age for 3-4 months. Individual lots were then chosen and combined to create the final blend.

Clos du Bois Sauvignon Blanc V21 750ML

About the Wine The 2021 Clos du Bois Sauvignon Blanc is a bright wine that blossoms with aromas of lemongrass and honeysuckle. Pale straw in color, this wine delivers layers of Meyer lemon, kiwi and grapefruit with a lovely hint of white raspberry on the finish. A bright mouthfeel leads to a cleansing midpalate and a medium-long finish. Viticulture Notes We source the fruit for our delicious Sauvignon Blanc from select vineyards throughout California. The 2021 vintage began cool with much of the state experiencing dry conditions throughout the spring months. Summer brought the usual weather patterns that California vineyards thrive on: warm sunny days and cool fog-laden evenings, which allows the fruit to ripen slowly and evenly. The result is fully developed flavor characteristics, color and acidity. Winemaking Notes To retain the lively acidity and fruit characteristics of our Sauvignon Blanc, the grapes were harvested in the cool hours of the evening or early morning. After arrival at the winery, the fruit was gently pressed as whole clusters before being racked into stainless steel tanks to undergo fermentation. The yeast strain was chosen for its minimal impact on the flavors and aromas of the wine allowing the fruit to shine. The resulting wine is fresh, vibrant and delicious.

Clos du Bois Buttery Chardonnay V22 750ML

Our 2022 Buttery Chardonnay is a rich, full-bodied white wine with a creamy mouthfeel. Inviting aromas of honeysuckle and spiced pear greet the nose. Layers of fresh baked apple and pear meet taps of warm spice and caramelized pineapple. The finish is long and decadent, ending with a drop of rich honey.

Clos du Bois Cabernet Sauvignon V20 750ML

About the Wine The 2020 Clos du Bois Cabernet Sauvignon is a decadently smooth, full-bodied wine. Deep purple shows in the glass with aromas of black cherry and a subtle touch of vanilla from the oak. The palate presents layers of plum, blackberry, mocha and toasted oak. This wine carries the rich berry notes through the finish. Viticulture Notes The fruit for this alluring Cabernet Sauvignon came from select vineyards from some of California’s most renowned growing regions. California’s 2020 vintage experienced a cool, mild growing season with an accelerated heat spell in August, resulting in early ripening. Vintage 2020 in California shows vibrant acidity and concentrated flavor.  Winemaking Notes Grapes were mostly whole cluster to stainless steel fermenters where the grapes were carefully extracted to allow for a softer more approachable mouthfeel and capture the unique fruit characteristics of cabernet sauvignon. At the end of the fermentation, selected lots were racked onto oak and aged for 4-5 months to allow for a perfect balance of fruit and oak.

Clos du Bois Chardonnay V20 750ML

Our Clos du Bois Chardonnay is a refreshingly aromatic wine from the rugged coast of California. Scents of warm apple pastry rise from the glass with touches of honey and toasted oak. Bright layers of freshly sliced pear and ripe apple with zests of citrus carry through the long finish. Fruit for this classic Chardonnay originates from select vineyards along the coast of California. The North Coast imparts ripe apple and pear characteristics, while the Central Coast brings full, concentrated flavor and a gorgeous acidity to the grapes. We harvested the grapes in the cool of night, then gently pressed them to preserve the Chardonnay’s fruit characteristics. After settling, the juice was partially barrel fermented in a combination of French and American oak, with the remaining juice undergoing fermentation in stainless steel. To soften the wine’s acidity and impart a rich and creamy mouthfeel, we put the wine through malolactic fermentation.

Clos du Bois Pinot Grigio V21 750ML

Our 2021 Pinot Grigio is a bright white wine with a refreshing mouthfeel. Silvery straw in color, this wine opens with aromas of Meyer lemon, ripe pear and honey. The palate features pear, honeydew melon and white peaches and notes of citrus zest. The finish is clean with accents of stone fruit. Fruit for our delicious Pinot Grigio is sourced from select vineyards throughout California. The 2021 vintage experienced ongoing dry conditions in the state. A mild summer helped increase hangtime, resulting in optimal ripening and an excellent vintage overall. The wine was fermented exclusively in temperature-controlled stainless steel fermenters at 55°F with no lees contact. The lower temperature helped slow the rate of fermentation, encouraging the wine to retain its bright acidity and fully develop its aromatics. Specialty yeast strains noted for their aroma-enhancing qualities were also employed during fermentation.
