Our appealing Apothic Chardonnay opens with generous notes of crisp red and green apple, layered with hints of honey, caramel and vanilla. This luscious wine offers a silky-smooth texture and a bright, lively finish. <br><br> <b>Viticulture Notes:</b><br> We selected the majority of the grapes for Apothic Chardonnay from the unique Lodi Delta region in California. With its cool evenings and warm days, Lodi is known as a producer of fragrant, concentrated and silky textured fruit. California’s 2022 growing season was cool and mild, with a heat spell in August that resulted in an earlier than average harvest. Wines showcase vibrant acidity and concentrated flavors.  <br><br> <b>Winemaking Notes:</b><br> We harvested a majority of the grapes for our Apothic Chardonnay at night in cool temperatures to preserve the character of the fruit. The fruit was whole-cluster pressed, then the juice settled and was racked to tank to optimize clarity and mouthfeel. The Chardonnay underwent partial malolactic fermentation and was fermented on selected oak with sur lie aging, enhancing the wine’s delicate fruit flavors while adding subtle caramel, cream and spice characteristics. A portion of the Chardonnay and Viognier were fermented in stainless-steel tanks.

When we decided not to make Mercury Head in 2020, the anticipation for the next release was palpable. In the cellar, we were giddy, ready to assemble a blend worthy of the famed dimes. The 2021 vintage was fortuitous in both yield and quality, giving us a lot of components to make trial blends with. We’re very excited to bring back Mercury Head as 100% Cabernet Sauvignon sourced from both the Stagecoach and Warnock Vineyards on Atlas Peak, the Morisoli Vineyard in Rutherford and the Taplin Vineyard in St. Helena. <br><br> <b>WINEMAKER’S NOTES</b><br> An almost-black, opaque garnet core sit s in the glass with slow-moving tears falling down the sides. Immediate aromatic notes of ripe cassis, charred ribeye, sandalwood and freshly cut oak pilfer—breathe deeper for more. The first sip is a complex, layered conundrum of blackberry, black plum, fennel, licorice and dark chocolate. More sips peel back the layers to reveal a rich and balanced wine with a deep cassis core. A sweet linger on the finish closes the wine with softly textured chalky tannins.

With vineyards throughout Treviso’s coveted hillside vineyards along the Piave River, the region’s moderate climate and well-drained clay and chalk soils yield exceptional grapes. This unique climate produces fresh, vibrant yields that offer high acidity and elegant fruit flavors. <br><br> <b>Winemaking Notes</b><br> La Marca Prosecco Rosé is created using the traditional grape used in Prosecco, Glera, blended with just the right amount of Pinot Noir. Once the grapes arrive at the winery, they undergo strict, time-honored winemaking practices. After the Glera was harvested, the grapes were crushed and then immediately pressed in gentle membrane presses. The juice was allowed to cold settle before initial fermentation in upright stainless-steel tanks. The Pinot Noir is fermented on skins, then gently pressed. At the end of their individual fermentations, the Glera and Pinot Noir assemblage is crafted for our La Marca Prosecco Rosé base. An extended secondary fermentation of at least 60 days adds structure and complexity to the blend.

The juice was allowed to cold settle before initial fermentation in upright stainless steel tanks at a maximum temperature of 65°F. A focus on geographic diversity has been a principle of ours or many years. Sourcing grapes from across California gives us the flexibility to produce wines when some regions are affected by forces outside of our control. But when the entire state experiences a great vintage, the diversity can sometimes be a problem…a good problem. Extensive tastings of trial blends are difficult when each blend is great for specific reasons. But in the end, we all agreed on the blend in front of you, comprised of fruit from across California — Sonoma Coast, Santa Lucia Highlands, Sta. Rita Hills and many more. <br><br> <b>WINEMAKER’S NOTES</b><br> Crisp crimson in the glass, the 2021 Slander opens with notes of wild strawberry, pomegranate, Bing cherry and cedar. While mostly even and temperate, warm stretches in summer accelerated ripening, leading to a fast and early harvest. Overall, quality was high, with concentrated, layered flavor development and rich complexity. <br><br> <b>Winemaking Notes</b><br> To retain the natural characteristics of each varietal, we fermented the blend at cool temperatures. The Pinot Grigio, Viognier and Riesling were fermented 100% in stainless steel tanks to preserve delicate fruit aromas. Select lots of Chardonnay were fermented and aged on oak to add a touch of vanilla characteristics. A small portion of the blend was selected for malolactic fermentation, which enhanced character and mouthfeel.

The 2021 Apothic Red is a rich Zinfandel-led Red blend with red silky, smooth layers of black cherry, boysenberry and black pepper. Syrah and Merlot add intriguing notes of ripe blueberry and boysenberry, while a mix of other red varieties add dimension and depth with hints of spice. Soft and plush on the palate, the long finish brings vanilla and mocha characteristics, a reflection of the selective oak aging used to enhance and support the wine’s elegant appeal. <br><br> <b>Viticulture Notes</b><br> We selected the majority of the grapes for Apothic Red from the Lodi and Central Valley areas in California. We sourced the Zinfandel from Lodi, a premium producer of intensely concentrated, silky textured fruit. California’s 2021 growing season was cool and mild, excellent conditions for developing mature, layered fruit. A heat spell in August resulted in an earlier than average harvest. Wines from this vintage showcase vibrant acidity and concentrated flavors. <br><br> <b>Winemaking Notes</b><br> Red was our first Apothic release: a daringly bold and original blend of California-grown red grapes that created a phenomenon. Grapes for 2021 Apothic Red were de-stemmed, with a portion selected for whole-cluster fermentation. We fermented the wine for five to seven days in a combination of cone-sweep and upright tanks at a temperature averaging 85-88°F. Across all lots, we exercised meticulous temperature control to maximize the extraction of color and dark fruit notes.
