The 2020 William Hill North Coast Chardonnay is a decadent wine with aromas of a freshly baked apple crisp. Notes of warm apple, toasted caramel and just a tap of spice. Layers of green apple and lemon brighten the palate. The supple mouthfeel supports the midpalate, and the wine finishes with notes of brioche and toasted caramel. <br><br> Sourcing grapes throughout the North Coast of California provides our winemaker with an ample array of vineyards from which to craft his blends. Warm summer days, cool fog-laden evenings and ample summer breezes ensure that the fruit gains a long hang-time to ripen slowly and evenly. <br><br> Our 2020 North Coast Chardonnay was brought into the winery gently destemmed and then pressed into stainless steel tanks for a temperature controlled cool fermentation. Then, the wine underwent malolactic fermentation and aged on French oak for eight months sur lie, to impart a supple mouthfeel.

Our 2021 William Hill Estate North Coast Sauvignon Blanc is a crisp, fruit-forward wine with refreshing tropical notes. Our William Hill Estate North Coast Cabernet Sauvignon is a fruit-forward wine that opens with sumptuous aromas of dark fruit and plum compote with a waft of baking spice. The smooth, plush palate reveals additional notes of black cherry with hints of cedar. <br><br> The 2019 vintage was warm and evenly paced. Plentiful winter rains and a cool spring delayed budbreak, leading to rains in late May. By June, a consistently warm and steady summer emerged, setting the stage for expressive and vibrant wines. With exceptional growing conditions, vines developed clean, healthy clusters with rich, complex flavors and excellent structure. <br><br> Fruit for our North Coast Cabernet Sauvignon was destemmed and crushed prior to fermentation in stainless steel tanks at a maximum temperature of 90°F. Following fermentation, this wine underwent malolactic fermentation to soften mouthfeel before oak aging.

<b>WINE TASTING NOTES:</b><br> The William Hill Estate Winery 2020 Napa Valley Chardonnay captures a sense of place from California's famed winegrowing region. Full-bodied and creamy, our Chardonnay opens with aromas of green apple, ripe pear and fresh-baked brioche. Layers of ripe apple and green fig are accented by notes of lemon curd, vanilla and buttery shortbread. The finish is long and lingering, with highlights of toast and a slight floral note. <br><br> <b>VITICULTURE NOTES:</b><br> In 2020, the grapes we selected for the final blend of our Napa Valley Chardonnay came from select growers in St. Helena, Oak Knoll and Carneros. These are all amazing regions that are renowned for growing concentrated Chardonnay. The 2020 harvest began with very welcome spring rains, which helped maintain cover crops and got the vines off to a nice start. The fruit ripened slowly and evenly in mostly steady temperatures. The resulting wines are beautifully layered, well-balanced and have a lovely natural acidity to them. <br><br> <b>WINEMAKER NOTES:</b><br> After Grapes for this wine were hand harvested in the cool morning hours and then brought to the winery to be hand sorted. They were then whole cluster pressed and barrel fermented in American oak (30% new) barrels. Each lot was kept separate and underwent 100% malolactic fermentation. Only the finest lots made it into the final blend to craft the ideal representation of Napa Valley Chardonnay.

Our 2018 Napa Valley Chardonnay is smooth and elegantly balanced. Aromas of caramel and buttered croissant lead to beautifully integrated layers of Bosc pear, yellow apple and Meyer lemon. The indulgent, velvety mouthfeel gives way to sparkling acidity that lingers on the finish. Enjoyable on its own or paired with mild or creamy dishes such as a fresh seasonal salad or linguini pescatore. <br><br> <b>Viticulture Notes:</b><br> To create a dynamic Chardonnay, we carefully selected grapes from several distinct growing regions in Napa Valley. Fruit was handpicked from the warm St. Helena AVA, which provide tropical flavors and a round mouthfeel. We also looked to the moderate Oak Knoll AVA for structure and the cool, foggy vineyards of Carneros to bring bright citrus notes and crisp acidity to the blend. <br><br> The 2018 vintage began with plentiful winter rains. After an early budbreak, serene and sunny conditions in spring allowed vines to develop consistently and uniformly. Warm and mild throughout the growing season, the steady summer eased into an idyllic fall. With ample time on the vine to ripen to perfection, clusters came into the cellar with deep layers of favor and intricate structure. Harvest was slightly later than usual but brought beautifully developed fruit with marked complexity. <br><br> <b>Winemaker Notes:</b><br> The grapes for our William Hill Estate Napa Valley Chardonnay were harvested by hand and whole cluster pressed. All juice underwent barrel fermentation at an ambient cellar temperature of 65˚F. Following primary fermentation, the wine underwent full malolactic fermentation with sur lie aging in 25% new American oak. The lees were stirred by hand weekly for four months to build a soft and creamy mouthfeel.

Distinctly fruit forward on the nose and palate, the William Hill Central Coast Chardonnay is a beautiful summer wine. The nose gives you aromas of stone fruit, Granny Smith apples and a hint of lemon zest. On the palate you will be treated to layers of nectarine, green apple, citrus with hints of caramel, vanilla and a delicate edge of orange blossom. This is an elegant expression of Chardonnay with a creamy mouthfeel and long honey-tinged finish. <br><br> <b>VITICULTURE NOTES:</b><br> Our 2020 Central Coast Chardonnay is sourced primarily from San Luis Obispo and Monterey Counties. The 2020 harvest experienced ongoing drought conditions throughout the state of California which caused a slight reduction in crop size. Both San Luis Obispo and Monterey are known for warm sunny days and cool evening weather patterns. These idyllic conditions allow the Chardonnay to ripen slowly and evenly. The resulting fruit is fully developed with beautifully concentrated of flavors and seasoned tannins. <br><br> <b>WINEMAKER NOTES:</b><br> The grapes for our Central Coast Chardonnay were whole-cluster pressed. The juice was fermented in stainless steel tanks to ensure a slow, even and clean process. This Chardonnay underwent malolactic fermentation while being aged on its lees and stirred weekly to build texture and a creamy mouthfeel. After individual evaluations of each lot, the final blend was assembled to create a rich and beautifully balanced Chardonnay.

Our 2018 Benchland Series Chardonnay comes from several vineyards throughout Napa Valley as well as a block of Musque clone Chardonnay from Russian River. A beautiful blend composed of our reserve wines, it showcases the spectrum of our Chardonnay portfolio. It opens with expressive aromas of orange blossom, fig, Bosc pear and a touch of lemon custard leading to a rich mouthfeel and flavors of caramel apple and flaky croissant. The finish is long and round, bursting with fruit and hints of toasty oak.
