Dichotomous in nature, Papillon is our ode to the old world. A five varietal Bordeaux-blend, it is many things in one—an approachable yet ageable wine; a hedonistic yet nuanced wine; a piece of art yet just a bottle of wine. 2020 was a tough year in many respects with winemaking being the least of them. But the challenges of the growing season resulted in even more rigorous tastings and blending sessions. What has resulted is a wine worthy of the Papillon label. Sourced from across the Napa Valley, we incorporated fruit from several noteworthy vineyards—Morisoli, Taplin, Lewelling, Stagecoach, Indian Joe—and even from the Monte Rosso vineyard on Moon Mountain. <br><br> Our good friend and fellow winemaker, Greg Gorman, photographed the label. <br><br> <b>WINEMAKER’S NOTES</b><br> The dark crimson core and brick rim sets the stage, as aromas of currant, blackberry, blue fruits, anise, lavender and brioche float from the glass. Enveloping and coating becomes mixed berry pie, sarsaparilla, cola and blackcurrant with structured heft through the mid-palate. Chalky tannins a la black tea or baking chocolate round out the wine with a pleasing finish of sweet oak.

A focus on geographic diversity has been a principle of ours or many years. Sourcing grapes from across California gives us the flexibility to produce wines when some regions are affected by forces outside of our control. But when the entire state experiences a great vintage, the diversity can sometimes be a problem…a good problem. Extensive tastings of trial blends are difficult when each blend is great for specific reasons. But in the end, we all agreed on the blend in front of you, comprised of fruit from across California — Sonoma Coast, Santa Lucia Highlands, Sta. Rita Hills and many more. <br><br> <b>WINEMAKER’S NOTES</b><br> Crisp crimson in the glass, the 2021 Slander opens with notes of wild strawberry, pomegranate, Bing cherry and cedar. Secondary aromatics abound, with hints of redwood grove underbrush, white pepper and earth. Delicate on entry, the palate is flooding with red plum, cherry cola, rhubarb and spices. A touch of cocoa powder on the finish, the wine closes with confident acidity and length.

Our William Hill Estate North Coast Cabernet Sauvignon is a fruit-forward wine that opens with sumptuous aromas of dark fruit and plum compote with a waft of baking spice. The smooth, plush palate reveals additional notes of black cherry with hints of cedar. <br><br> The 2019 vintage was warm and evenly paced. Plentiful winter rains and a cool spring delayed budbreak, leading to rains in late May. By June, a consistently warm and steady summer emerged, setting the stage for expressive and vibrant wines. With exceptional growing conditions, vines developed clean, healthy clusters with rich, complex flavors and excellent structure. <br><br> Fruit for our North Coast Cabernet Sauvignon was destemmed and crushed prior to fermentation in stainless steel tanks at a maximum temperature of 90°F. Following fermentation, this wine underwent malolactic fermentation to soften mouthfeel before oak aging.

The grapes for this wine were selected from some of the most premier Napa Valley vineyards, a mix of valley floor, benchland and hillsides. All grapes were hand harvested, delivered in half-ton picking bins, then hand-sorted, destemmed and partially crushed before being gravity-fed into small open-top fermenters. The cap was alternately punched down and pumped over up to four times daily through fermentation. Once fermentation completed, the free run juice was drained and the must gently pressed in a basket press. The wine was gravity racked into French oak barrels (87% new) for malolactic fermentation and remained in individual barrel lots until the final blend was assembled and aged.

Our 2018 Sonoma County Cabernet Sauvignon is an approachable, fruit-driven wine. It offers a welcomingly round mouthfeel with ripe notes of red fruit and cherry. Delicate hints of dark chocolate and oak spice on the finish add layers of elegance and freshness, offering a rich yet balanced expression of the varietal.​ <br><br> <b>Viticultural Notes</b><br> Grapes were predominantly selected from two of our renowned, crown jewel vineyards in Sonoma County: Frei Ranch in the Dry Creek Valley AVA and Barrelli Creek Vineyard in the Alexander Valley AVA. In 2018, cooler temperatures and moderate weather led to a long growing season, allowing grapes to ripen optimally. The mild weather allowed for exceptional flavor development and resulted in a slightly later harvest with beautifully balanced yields. ​ <br><br> <b>Winemaker Notes</b><br> After de-stemming, fermentation temperatures between 88°F and 92°F encouraged rich flavor development and a plush mouthfeel. To preserve fresh Cabernet fruit flavor, this wine was aged primarily in tank while a careful selection of French and American oak brought forth additional complexity. A touch of Petite Sirah contributed to this wine’s rich depth and round profile. ​

Plush, flavorful and food-friendly, pair this with roasted beet-goat cheese salad, barbequed pork ribs, cheeseburgers or rich mushroom dishes. <br><br> <b>VITICULTURE NOTES</b><br> We looked to Monterey, Sonoma and Santa Barbara Counties to deliver this plush and distinctive Pinot Noir, relying on a collection of estate vineyards for the majority of our fruit. Overall, vintage 2021 was exceptional in California. A temperate and dry year with few temperature swings, the season was smooth, consistent and evenly paced. Dry conditions in winter and spring led vineyard managers to establish a healthy, balanced canopy early in the growing season with thoughtful water management throughout. At harvest, grapes showed beautiful concentration, advanced flavor development and ideal structure at lower-than-usual Brix levels, delivering wonderfully mature fruit into the cellar earlier than an average season. Overall, an outstanding vintage. <br><br> <b>WINEMAKING NOTES</b><br> We harvested whole grape clusters before de-stemming and delivering to stainless steel fermentation tanks. Following a five-day cold soak, the must fermented for another five to eight days, receiving regular punch-downs tailored to each lot. Once dry, the wine was drained to tank and barrel to undergo malolactic fermentation before aging on a combination of French and American oak. Blending took place in the summer with a special focus on maximizing the unique stylistic contributions of lots from each county.

Our bright and appealing Russian River Valley Chardonnay showcases the best of this classic cool-climate region. Aromas of citrus and orange blossom open with every swirl. Our Gnarly Vine Zinfandel grapes were picked and sorted by hand at our Micro Winery. They were then gravity fed into small, open top tanks for a three-day cold soak before primary fermentation. The wine was aged in a combination of French oak barrels (47% new) and American oak barrels (21% new) for a total of 16 months. Aromas and flavors of baked raspberries, Bing cherry, and mulberries are balanced by notes of cracked peppercorn, vanilla bean and the historic vineyard’s hallmark overtones of spice and dusty earth. Rich and concentrated, this wine showcases a vibrant line of acidity that follows through in the long, silky finish.

Being stranded in a desert leaves a lot to be desired — how to get back home, where to find food, water and shelter, and thoughts of survival. For eight years in the early 2010s, Orin Swift Cellars was barred from making any Zinfandel wines. From the grape that started everything OSC, the ‘desert’ gave us an opportunity to explore the diverse range of California’s grape varietals. But, as soon as those eight years were up, we had a plan in place to pay homage to our home. The 2021 Eight Years in the Desert marks the sixth iteration of our return to the world of Zinfandel. <br><br> A deep maroon core with a ruby rim, the 2021 Eight Years in the Desert opens with aromas of wild blackberry, pepper, oatmeal raisin cookie, Sequoia forest floor, bay leaf and spices. The entry is broad and opulent with a mid-palate of brambly raspberry, black cherry, ripe blueberry and a hint of cacao. The wine has superb length through the finish with ripe tannins and a close of sweet oak.
