The 2020 Chateau Souverain Pinot Grigio is a bright, medium-bodied white wine from California. A light straw color shows in the glass as aromas of pear, green apple and white flower greet the nose. The finish is long with undercurrents of wet stone and lemon zest. <br><br> <b>Viticulture Notes</b><br> California’s 2020 vintage experienced a cool, mild growing season with an accelerated heat spell in August, resulting in early ripening. Vintage 2020 in California shows vibrant acidity and concentrated flavor characteristics.  <br><br> <b>Winemaking Notes</b><br> To showcase the bright citrus character of Pinot Grigio, we harvested the fruit at optimal sugar levels. We then whole-cluster pressed the fruit before fermenting slowly at cool temperatures in stainless steel to preserve the floral and fruit notes. To create a classic Pinot Grigio style, the wine did not undergo malolactic fermentation or oak aging.

Our 2021 Chateau Souverain Sauvignon Blanc is a crisp, California-style white wine. Our Sauvignon Blanc starts with bright layers of juicy grapefruit that lead to hints of lime flower and pear. A crisp, clean palate reveals pops of candied tangerine and mouthwatering acidity for a breezy, thoroughly refreshing finish. <br><br> <b>Viticulture Notes:</b><br> The 2021 growing season was dry with budbreak in early March. Harvest began in early August. The resulting grapes were picked at the optimal ripeness while still maintaining their natural acidity. <br><br> <b>Winemaking Notes:</b><br> We harvested our Sauvignon Blanc at the optimal sugar levels to showcase the bright citrus character of the variety. Once at the winery, we whole-cluster pressed, then fermented slowly at cool temperatures in stainless steel to preserve the distinct floral and fruit notes. After fermenting each lot separately, we selected just the right combination to offer bright, juicy character and crisp acidity. We refrained from any oak exposure or malolactic fermentation.

Our 2020 Chateau Souverain Chardonnay is a lightly oaked, full-bodied wine from California. Our Chardonnay opens with aromas of light honeysuckle, baked apple and freshly baked brioche. The palate offers layers of pear and lemon curd. The silky mouthfeel finishes with just a hint of crisp apple on the lengthy finish. <br><br> <b>Viticulture Notes:</b><br> California’s 2020 vintage experienced a cool, mild growing season with an accelerated heat spell in August, resulting in early ripening. Vintage 2020 in California shows vibrant acidity and concentrated flavor characteristics. <br><br> <b>Winemaking Notes:</b><br> After harvest, the fruit was gently pressed and allowed to settle before being racked to fermenters. The juice was slowly fermented at cool temperature and after fermentation it was left on lees which were stirred up to four times a month through January. This helps to build richness and achieve the smooth mouthfeel that is the hallmark of the Chateau Souverain style.
