The 2021 vintage began cool with much of the state experiencing dry conditions throughout the spring months. Summer brought the usual weather patterns that California vineyards thrive on: warm sunny days and cool fog-laden evenings, which allows the fruit to ripen slowly and evenly. The result is fully developed flavor characteristics, color and acidity.

Winemaking Notes
To retain the lively acidity and fruit characteristics of our Sauvignon Blanc, the grapes were harvested in the cool hours of the evening or early morning. After arrival at the winery, the fruit was gently pressed as whole clusters before being racked into stainless steel tanks to undergo fermentation. The yeast strain was chosen for its minimal impact on the flavors and aromas of the wine allowing the fruit to shine. The resulting wine is fresh, vibrant and delicious.
