The deep purple-ruby in the glass, this Reserve is fragrant and beautifully defined on the nose with aromas of macerated dark cherries, rich cassis, and candied violets which are further complexed with plum, dried herbs and cedar forest floor accents. The palate is youthful and vibrant, bursting with black and blue fruits, plum, along with notes of warm fig and dark chocolate shavings. This wine is creamy textured, with seamlessly integrated fine tannins and brisk minerality that brings together all the layers in a long succulent finish. <br><br> The 2019 growing season in Paso Robles had about average rainfall and plenty of sunshine. Going into veraison, consistently warm, mild temperatures during the day and coastal influences with cooler temperatures at night were ideal for development of full canopy and full clusters. The late season had a few typical heat spikes that slowed down the vine growth, but enhanced flavors and sugar accumulation in the fruit. <br><br> The fruit for this Reserve is sourced mostly from Truesdale vineyard in Paso Robles. The well-drained arbuckle and sandy loam soils combined with the vineyard’s deep inland location at 1,560 ft elevation and south-facing slope create the ideal terroir for intensely flavored wines with depth of flavor, excellent structure and naturally balanced acidity. <br><br> Fruit was harvested in the cool morning and brought to the winery. The grapes were destemmed, sorted and delivered to large stainless-steel tanks. Wine was fermented on the skins in small lots with 5% barrel fermented. Fermentation was managed by pump overs for maximum extraction of color and flavor. The lots were then individually pressed on the skins and settled before transferring into French oak barrels, where the wine was aged for 20 months.

The AVA’s extended growing season allows fruit to ripen slowly and leads to well-balanced, flavorful wines. <br><br> <b>WINEMAKING</b><br> Picked at the peak of ripeness and flavor, the Chardonnay grapes were destemmed and sent to small French oak barrels for fermentation, of which, 100% underwent a secondary malolactic fermentation to give the wine a soft and creamy texture. The wine aged on the lees in French oak barrels for 11 months.

It was another remarkable growing season in the Santa Lucia Highlands, resulting in wines with beautiful color, concentrated flavors, great structure and naturally balanced acidity. <br><br> After being carefully picked and precisely sorted for quality, the fruit was destemmed, sent direct to press and fermented entirely in small French oak barrels. The wine was hand-stirred on its lees every three weeks for the 10 months it aged in barrel. When the wine was ready to be blended, our winemaker selected only the finest barrels that best express the aromas and flavors of the Santa Lucia Highlands

The wine was then pressed off, settled and racked into a selection of small 60-gallon French oak barrels where it was aged for 14 months. When the wine was ready to be blended, our winemaker selected only the finest barrels that exemplify the aromas and flavors of the Santa Lucia Highlands.

Subtle hints of sage, clove and vanilla add further complexity to the nose of bright cherry and pomegranate. On the palate, layers of fruit continue to evolve with notes of crushed red cherry and bramble berries. Structured palate provides a round and soft mouthfeel with bright acidity, silky tannins and a touch of earthy spice on a long gentle finish. <br><br> About average winter rainfall provided good soil moisture profile for the start of the growing season. Budbreak started the last week of February, mostly in younger blocks, with the rest popping out mid-March. Canopies were at arm’s length by the end of April with no signs of cap fall until the middle of May. Veraison started slightly later than normally, towards the end of July, which led to a later start of harvest. The weekend of 9/14, we had a heat spike, but after three days the weather returned to normal. The harvest started fast, but overall had a beautiful even pace with cool nights and moderate daytime temperatures throughout the end of season. The quality of the fruit was outstanding, resulting in wine with beautiful color, concentrated flavors, balanced tannins, round mouthfeel and soft acidity. <br><br> Our 2019 Reserve Pinot Noir reflects the cool climate and well-drained soils of our estate vineyards as well as the unique complexity brought on by multiple clones. Pommard clone from Doctor’s vineyard makes up half of this blend and is one of our favorite clones in the SLH. Smith Vineyard is planted to Calera clone, which is known for its tight small clusters and gives depth to the blend. Finally, fruit from Lone Oak vineyard, coming from our famed Orchestal block planted in 2013, duplicating mass variation of many burgundy vineyards with a multitude of clones, increases the complexity of the blend.

Steady temperatures ensured fruit was maturing slowly allowing for gradual ripening and extended hang times. A small heat spike in late September slightly sped up the harvest but fruit still came in with beautiful acidity. <br><br> Harvested from certified sustainable vineyards, the fruit was hand-picked in the early morning, brought to the winery and destemmed. The wine was cold fermented in stainless steel tanks to preserve the beautiful natural acidity of the grapes.

The finish is long and smooth. <br><br> <b>VITICULTURAL NOTES</b><br> We chose the El Pomar and San Miguel Districts as the source for our Cabernet Sauvignon, as they are the best sub-AVAs Paso Robles offers for this variety. Sunnybrook Vineyard’s predominantly Arbuckle Complex soils are composed of well-drained clay and are ideal for Cabernet. A former cattle ranch situated on rolling, golden hills among ancient oak trees, Sunnybrook is planted to various clones and rootstocks and possesses a unique blend of terroir within the ranch itself. The balance of fruit was sourced from our smaller San Miguel Vineyard, situated near the Salinas River. Wide-open and flat, San Miguel provided an excellent juxtaposition to Sunnybrook, with loamy, sandy soils from the Hanford and Greenfield series. <br><br> <b>WINEMAKING NOTES</b><br> Tried to let the fruit hang as long as needed to achieve the optimal flavors. The grapes were harvested in early morning, at the coolest time of the day. Then they were destemmed and crushed to tank were they fermented on skins until the optimal amount of tannin and flavor had been extracted. The wine was then pressed off of skins and aged in oak until the optimal flavors had been extracted before proceeding to being blended.
