Dichotomous in nature, Papillon is our ode to the old world. A five varietal Bordeaux-blend, it is many things in one—an approachable yet ageable wine; a hedonistic yet nuanced wine; a piece of art yet just a bottle of wine. 2020 was a tough year in many respects with winemaking being the least of them. But the challenges of the growing season resulted in even more rigorous tastings and blending sessions. What has resulted is a wine worthy of the Papillon label. Sourced from across the Napa Valley, we incorporated fruit from several noteworthy vineyards—Morisoli, Taplin, Lewelling, Stagecoach, Indian Joe—and even from the Monte Rosso vineyard on Moon Mountain. <br><br> Our good friend and fellow winemaker, Greg Gorman, photographed the label. <br><br> <b>WINEMAKER’S NOTES</b><br> The dark crimson core and brick rim sets the stage, as aromas of currant, blackberry, blue fruits, anise, lavender and brioche float from the glass. Enveloping and coating becomes mixed berry pie, sarsaparilla, cola and blackcurrant with structured heft through the mid-palate. Chalky tannins a la black tea or baking chocolate round out the wine with a pleasing finish of sweet oak.

Da Vinci Chianti Riserva is a deep purple hue, opening with aromas of ripe plum and red fruit with hints of vanilla and cinnamon. On the palate, this medium-bodied wine perfectly balances rich notes of black cherry, espresso and anise alongside soft tannins that linger on the finish. Our Chianti Riserva is an elegant companion to meals, pairing especially well with pasta and meat dishes.

Deep ruby in color with a garnet rim, the 2017 Others reveals a nose of preserved strawberries with an earthy minerality. There are also hints of fennel and lavender that tempt the palate. Broad and luscious with a gentle tannic grip, lots of red fruit are on display which lead to a smooth and concentrated mid-palate. Finishing with purpose, we again find herbal and mineral flavors in a long, soft decrescendo. Drinking very well now the wine is intense and yet very approachable.

In the famed book, The Count of Monte Cristo, protagonist Edmond Dantes arrives to Marseille on a ship named ‘Pharaon.’ The word’s etymological roots and context since inspired Dave Phinney’s philosophy and the reserve wine for Department 66. Aromas of sweet oak, dark chocolate liqueur and Tahitian vanilla are complemented by ripe plum and herbal sage notes. Savory red fruit flavors of boysenberry and rhubarb fill the palate and blend with a glimpse of schist and minerality. Firm tannins are primed for extended aging while lingering acidity extends the finish across the palate.

TRE stands for its three grape varieties Sangiovese, Merlot and Cabernet Sauvignon as well as for its three Tuscan vineyards (Maremma, Castellina and Radda in Chianti). The assemblage is dominated by Sangiovese with 70 percent, but Merlot and Cabernet Sauvignon also bring their charm with 15% each. This well-structured, medium-bodied wine is aged for twelve months before it is bottled. Two thirds of the expansion takes place in French tonneaux and one in cement. This elegant, well-structured cuvée offers plenty of drinking pleasure now or later and goes well with every kitchen. “There is no better entry-level wine than this,” says Monica Larner (for Robert Parker) with reference to the TRE 2014. It bears the name of the vineyard surrounding Villa Della Torre. It was the precursor of the double fermentation method: Franco Allegrini’s courageous winemaking intuitions have given rise to an extremely versatile wine with a strong personality. Acclaimed by the world’s most important wine magazines, Palazzo della Torre is one of the wines that has made Allegrini famous internationally. <br><br> An elegant, harmonious wine with considerable structure and aromaticity. Ruby red in colour with purplish hues, it initially reveals sophisticated notes of vanilla, black pepper and cloves, echoed by gentle nuances of raisined grapes. On the palate it is velvety, with soft tannins and a long and persistent finish. <br><br> The wine is produced via the technique of double fermentation: most of the grapes are vinified at harvest, while the remaining part is left to partially dry (appassimento). In January the wine produced, blended with the crushed grapes, begins a second fermentation. It then ages in second use French oak barriques for 15 months, in large barrels for 2 months and is fine-tuned for 7 months in the bottle

Apothic 2019 Inferno is a <i>Red Wine with a Whiskey Soul</i>. Aging some of the wine in whiskey barrels adds an intriguing dimension of maple and spice to Inferno’s dark layers of black plum and blackberry. The palate intensifies with notes of dried cherry and toasty vanilla, then leads to a long, warm finish. <br><br> <b>Viticulture Notes</b><br> The 2019 growing season started later than usual in California. Spring rain and cooling temperatures extended ripening time for the grapes. As a result, the grapes ripened more slowly and developed full flavors and acidity. Harvest 2019 produced slightly lower yields of fruit with concentrated flavor and optimal balance. <br><br> <b>Winemaking Notes</b><br> Apothic Inferno is first oak aged 2-4 months, then aged an additional 60 days in whiskey barrels to give a unique flavor profile that is expressed in the bottle.

Brancaia’s Chianti Classico Riserva DOCG is crafted with Sangiovese grapes from BRANCAIA’s 2 Chianti Classico vineyard estates. An elegant wine with aromas of black cherry and sweet herbs. On the palate, hints of almond and toast integrate alongside supple tannins before a long, mineral-tinged finish. The wine undergoes malolactic fermentation and is aged for 16 months in a mix of new and used French oak barrels, with Sangiovese aged in 500-liter tonneaux and Merlot in 225-liter barriques. Being stranded in a desert leaves a lot to be desired — how to get back home, where to find food, water and shelter, and thoughts of survival. For eight years in the early 2010s, Orin Swift Cellars was barred from making any Zinfandel wines. From the grape that started everything OSC, the ‘desert’ gave us an opportunity to explore the diverse range of California’s grape varietals. But, as soon as those eight years were up, we had a plan in place to pay homage to our home. The 2021 Eight Years in the Desert marks the sixth iteration of our return to the world of Zinfandel. <br><br> A deep maroon core with a ruby rim, the 2021 Eight Years in the Desert opens with aromas of wild blackberry, pepper, oatmeal raisin cookie, Sequoia forest floor, bay leaf and spices. The entry is broad and opulent with a mid-palate of brambly raspberry, black cherry, ripe blueberry and a hint of cacao. The wine has superb length through the finish with ripe tannins and a close of sweet oak.

The wine enters with class, being soft and lush, with notes of ripe plum, boysenberry and Santa Maria tri-tip. Grippy, chewy tannins, the wine closes with pleasing sarsaparilla and blackcurrant.

The 2020 Apothic Dark is a bold red blend with daring depths of black plum, fig and blackberry with accents of boysenberry jam. Deep garnet shows in the glass, opening with aromas of black raspberry and cocoa. A plush mouthfeel offers undercurrents of black cherry with hints of licorice that pull through to a long, spice-tinged finish. <br><br> <b>Viticulture Notes</b><br> California’s 2020 growing season experienced a cool, mild growing season with an accelerated heat spell in August, resulting in early ripening. Vintage 2020 in California shows vibrant acidity and concentrated flavor. <br><br> <b>Winemaking Notes</b><br> We harvested a majority of the grapes for the Apothic Dark at night in cool temperatures to preserve the character of the fruit. We fermented these selected varieties between 86° to 88°F. To create a silky mouthfeel and hints of dark chocolate and spice, we aged the blend in a mixture of French and American oak.
