Fireside Cheese Dip

Ingredients
• 16 oz cream cheese
• 1 pimiento strip
• 6 tbsp butter
• 2 tsp garlic powder
• 5 cooked pieces of bacon or pancetta
• 1 tsp paprika
• 8 oz pre-made Port Wine cheese spread
• 1 tsp hot sauce
• Freshly cracked black pepper, to taste
Directions
1. Soften cream cheese to room temperature.
2. Cut pimiento strip into small pieces.
3. Melt butter in microwave.
4. Dice bacon into small pieces.
5. Combine all ingredients in medium bowl until well-combined.
6. Serve at room temperature or refrigerate for 30 minutes and serve with crackers or a toasted baguette.

The palate is silky smooth, almost slippery, with bursting flavors of ripe strawberry, red plum, kirsch and graham cracker. Chalky tannins and a long-structured finish round out the wine.

Our 2021 Hahn Appellation Series Arroyo Seco GSM is ruby red in color, this wine bursts with aromas of strawberry and blueberry with a touch of lavender and white pepper. On the palate, layers of cherry, blueberry, blackberry and warm spice are complemented by a round mouthfeel and velvety tannins.

<b>VINEYARDS</b><br>
Grapes for this wine are sourced from vineyards in the Arroyo Seco appellation of Monterey County. Located south of the Santa Lucia Highlands, these vineyards sit on a gravelly alluvial plain with rocky soils that foster excellent drainage. Arroyo Seco, one of the smallest AVAs in California, is a hidden gem, boasting one of the longest growing seasons in the state. Cool winds channeling South from Monterey Bay through the Salinas Valley ensure gradual ripening, full development of vibrant fruit flavors and bright acidity.

<b>WINEMAKING</b><br>
Picked late in the evening, the grapes were destemmed into stainless steel tanks for fermentation. The wine was pumped over several times a day for maximum color, aromatics and flavor extraction. After about two weeks the wine was pressed off the skins, settled and racked into French oak barrels to age for 11 months.

This expressive blend features intense aromas of red and black berries, plums and dark cherries underscored by notes of lavender. The palate is smooth and rich with flavors of dark fruit, bramble berries and a touch of
dried eucalyptus and warm spice on a lingering finish.

The 2020 growing season in the Central Coast started with below average rainfall, causing supplemental irrigation to be applied when the vines started to awaken. Mild temperatures during veraison were perfect for developing full canopies and aiding fruit set with consistently small berry size. The late summer season had no heat spikes and allowed for gradual sugar accumulation and excellent flavor development.

Merlot and Petite Sirah are sourced from the Arroyo Seco AVA, a temperate growing region that fosters great acidity and intense structure development. A portion of Petite Sirah and Cabernet Sauvignon in this blend comes from family vineyards of our partner growers in San Antonio Valley which produces grapes with thick dark skins that give beautiful deep color to the wine. The Cabernet Sauvignon from Paso Robles contributes vibrant black cherry flavors and a supple, plush mouthfeel. A small addition of Malbec from Santa Lucia Highlands lends graceful and lifted aromatics to the blend.
