Our William Hill Estate North Coast Cabernet Sauvignon is a fruit-forward wine that opens with sumptuous aromas of dark fruit and plum compote with a waft of baking spice. The smooth, plush palate reveals additional notes of black cherry with hints of cedar. <br><br> The 2019 vintage was warm and evenly paced. Plentiful winter rains and a cool spring delayed budbreak, leading to rains in late May. By June, a consistently warm and steady summer emerged, setting the stage for expressive and vibrant wines. With exceptional growing conditions, vines developed clean, healthy clusters with rich, complex flavors and excellent structure. <br><br> Fruit for our North Coast Cabernet Sauvignon was destemmed and crushed prior to fermentation in stainless steel tanks at a maximum temperature of 90°F. Following fermentation, this wine underwent malolactic fermentation to soften mouthfeel before oak aging.

The deep ruby color of our 2019 Columbia Merlot alludes to enticing aromas of rich ripe fruits and a subtle hint of vanilla and cocoa. 82 % of the grapes in this Merlot were sourced from the renowned, Horse Heaven Hills AVA. The intense sunlight and south facing exposure of this region produced fruit with complex, dark berry character. In the cellar, our oak regimen resulted in pronounced notes of toasted vanilla and baking spice. Balanced acidity complements the textured mouthfeel, leading into a bold, lingering finish.

Delicate and approachable, Fleur de Mer Rosé captures the serene artistry of the idyllic, sun-washed coastal shores of Provence, the world’s best-known region for Rosé. Vintage 2020 opens with generous aromas of wildflowers, ripe cherry and freshcut citrus. Soft, smooth and beautifully balanced on the palate, fruit-forward notes of white peach, raspberry, strawberry and watermelon blend with refreshing hints of sea spray and herbs. A crisp and delightful showcase of the elegance of Provençal Rosé. The grapes selected for our 2020 Fleur de Mer Rosé were checked each week to ensure fruit is harvested at perfect maturity, ensuring layered flavors and delicate balance. Grapes were harvested in the very early morning hours to preserve aromas and structure, then direct-pressed to maintain the bright, concentrated fruit characteristics and produce our pleasing coral pink hue. During temperature-controlled cool fermentation of no more than 59°F, juices are tasted one or twice daily. For this vintage, Winemaker Florian Lacroux selected primarily Grenache and Cinsault to form the core of the blend, supported by other extraordinary Provençal red grapes in a beautifully harmonious, layered Rosé wine.

Each lot for our Storypoint Chardonnay was fermented separately to preserve and showcase the fruit’s quality and flavor. The juice was fermented at cool temperatures in stainless steel tanks. After completion of primary fermentation, the wine underwent malolactic fermentation and was aged on oak with sur lie aging practices to impart a creamy mouthfeel, a long finish and textural complexity. The Storypoint Chardonnay is a fruit-forward expression of some of California’s premium cool-climate vineyards. Hints of ripe apple, pear and white flower aromas open in the glass, revealing notes of white peach, melon and ginger. Toasty notes of vanilla and caramel thread through to the finish, imparting a rich, luscious palate.

Our 2019 Clos du Bois Buttery Chardonnay is a creamy, decadent white wine. Aromas of Fuji apple, honey and hints of lemon chiffon open in the glass. Layers of baked apple and pear are highlighted by undertones of warm barrel spice. <br><br> The majority of the fruit for this Buttery Chardonnay was sourced from coastal-influenced vineyards in Monterey County, California. The 2019 growing season experienced a wet winter, followed by a cool spring and a mild summer. As a result, the fruit experienced longer hangtimes, gradually accumulating sugar, flavor concentration and optimal balance. Harvest 2019 produced average yields of excellent quality fruit. <br><br> To preserve the stone fruit and tropical characteristics, we fermented the juice at cool temperatures in stainless steel vessels. From there, the juice underwent malolactic fermentation on specially selected oak to give the wine toasty, buttery aromas and a creamy mouthfeel.
