Prophecy Pinot Noir 2019 is a bright, medium-bodied red wine grown in California. Aromas of red fruit open in the glass with a touch of Tahitian vanilla and toasted coconut. The palate is refreshing with layers of cherry and raspberry underscored by accents of spice. A well-balanced mouthfeel leads to a long, velvety finish. <br><br> <b>Viticulture Notes</b><br> Vintage 2019 in California experienced cool temperatures that effectively lengthened the growing season and allowed the grapes to ripen gradually at lower sugars. Grapes from this harvest have concentrated flavor and optimal balance. <br><br> <b>Winemaking Notes</b><br> Grapes for this Pinot Noir were fermented at temperatures between 78° and 82°F in stainless steel tanks. Skin contact time was tailored to each vineyard for enhanced color and flavor and to maximize the plush mouthfeel. To create aromas of vanilla and toasted coconut, we aged the wine on American and French oak.

Introducing Apothic Sparkling, or “Bubbles with Attitude.” This new, limited release wine blends red and white grapes together, leading to a sparkling white wine with a darker disposition. Notes of strawberry and white peach combine with a hint of vanilla for a wine that is best served with a chill. <br><br> <b>Winemaking Notes:</b><br> The grapes for Apothic Sparkling were harvested at optimum ripeness during nighttime temperatures to retain fruit freshness. Fermentation at low to moderate temperatures, between 55°- 62° F, helped preserve the fruit flavors and create expressive aromatics. The wine was then moved to stainless steel tanks to preserve its brightness and balance.

The 2020 Apothic Rosé is a light, refreshing wine with a dark nature. Aromas of rose petals and honey open, revealing notes of dark cherry, black raspberry and ripe strawberry on a clean mouthfeel. The finish is long with a burst of watermelon at the end. <br><br> <b>Viticulture Notes:</b><br> California’s 2020 vintage experienced a cool, mild growing season with an accelerated heat spell in August, resulting in early ripening. Vintage 2020 grapes show vibrant acidity and concentrated flavor. We explored the state to find the best fruit for this blend from the heart of the Central Valley and Lodi. We harvested at the peak of quality to make a light-bodied, crisp and refreshing Rosé. <br><br> <b>Winemaking Notes:</b><br> Most of the fruit was harvested at night to limit color extraction. The grapes were delivered in whole clusters to our membrane presses for the gentlest processing possible. We kept fermentation temperatures cool to preserve delicate red fruit aromas. A small portion of the blend underwent malolactic fermentation and lees stirring to create a soft, refreshing mouthfeel. The wine was kept cool until blending to maintain a perfect balance of acid and fruit.

The finish is light and refreshing with a tantalizing hint of sweetness. <br><br> <b>Winemaking Notes:</b><br> The grapes for La Marca Prosecco were selected with great care from small vineyards throughout the Prosecco DOC. After harvest, the grapes were crushed and then pressed in gentle membrane presses. The juice was allowed to cold settle before initial fermentation in upright stainless steel tanks at a maximum temperature of 65°F. The still wine was aged on its lees prior to secondary fermentation. <br><br> <b>Recommended Cuisine:</b><br> La Marca Prosecco has the charm to stand alone as an aperitif, but it also has the body and the acidity to pair well with a range of foods, from seafood and mild cheeses to rich pasta dishes and decadent desserts. <br><br> La Marca adds sparkle to bubbly brunch bites, like classic eggs benedict, chorizo chilaquiles or chicken and waffles. Our 2018 Sonoma County Cabernet Sauvignon is an approachable, fruit-driven wine. It offers a welcomingly round mouthfeel with ripe notes of red fruit and cherry. Delicate hints of dark chocolate and oak spice on the finish add layers of elegance and freshness, offering a rich yet balanced expression of the varietal.​ <br><br> <b>Viticultural Notes</b><br> Grapes were predominantly selected from two of our renowned, crown jewel vineyards in Sonoma County: Frei Ranch in the Dry Creek Valley AVA and Barrelli Creek Vineyard in the Alexander Valley AVA. In 2018, cooler temperatures and moderate weather led to a long growing season, allowing grapes to ripen optimally. The mild weather allowed for exceptional flavor development and resulted in a slightly later harvest with beautifully balanced yields. ​ <br><br> <b>Winemaker Notes</b><br> After de-stemming, fermentation temperatures between 88°F and 92°F encouraged rich flavor development and a plush mouthfeel. To preserve fresh Cabernet fruit flavor, this wine was aged primarily in tank while a careful selection of French and American oak brought forth additional complexity. A touch of Petite Sirah contributed to this wine’s rich depth and round profile. ​

Our Clos du Bois Chardonnay is a refreshingly aromatic wine from the rugged coast of California. Scents of warm apple pastry rise from the glass with touches of honey and toasted oak. Bright layers of freshly sliced pear and ripe apple with zests of citrus carry through the long finish. <br><br> Fruit for this classic Chardonnay originates from select vineyards along the coast of California. The North Coast imparts ripe apple and pear characteristics, while the Central Coast brings full, concentrated flavor and a gorgeous acidity to the grapes. <br><br> We harvested the grapes in the cool of night, then gently pressed them to preserve the Chardonnay’s fruit characteristics. After settling, the juice was partially barrel fermented in a combination of French and American oak, with the remaining juice undergoing fermentation in stainless steel. To soften the wine’s acidity and impart a rich and creamy mouthfeel, we put the wine through malolactic fermentation.

Each lot for our Storypoint Chardonnay was fermented separately to preserve and showcase the fruit’s quality and flavor. The juice was fermented at cool temperatures in stainless steel tanks. After completion of primary fermentation, the wine underwent malolactic fermentation and was aged on oak with sur lie aging practices to impart a creamy mouthfeel, a long finish and textural complexity. The Storypoint Chardonnay is a fruit-forward expression of some of California’s premium cool-climate vineyards. Hints of ripe apple, pear and white flower aromas open in the glass, revealing notes of white peach, melon and ginger. Toasty notes of vanilla and caramel thread through to the finish, imparting a rich, luscious palate.

Our 2019 Buttery Chardonnay is a velvety, luscious white wine from the California coast. Aromas of lemon meringue and buttercream lift from the glass. Bright notes of apple and pear meet hints of warm vanilla with a dash of spice on the finish. <br><br> The grapes for our Chardonnay originated from some of California’s most prolific marine-influenced vineyards, where cooling fog prolongs hangtime and builds flavor complexity. The 2019 vintage experienced a wet winter and cool summer. Harvest 2019 produced average yields of excellent quality fruit. <br><br> Fermentation occurred at cool temperatures in stainless steel vessels to preserve the stone fruit and tropical characteristics, then underwent malolactic fermentation on specially selected oak to promote a creamy mouthfeel with toasty, buttery flavors and aromas.
