The juice was allowed to cold settle before initial fermentation in upright stainless steel tanks at a maximum temperature of 65°F. Each lot for our Storypoint Chardonnay was fermented separately to preserve and showcase the fruit’s quality and flavor. The juice was fermented at cool temperatures in stainless steel tanks. After completion of primary fermentation, the wine underwent malolactic fermentation and was aged on oak with sur lie aging practices to impart a creamy mouthfeel, a long finish and textural complexity. The Storypoint Chardonnay is a fruit-forward expression of some of California’s premium cool-climate vineyards. Hints of ripe apple, pear and white flower aromas open in the glass, revealing notes of white peach, melon and ginger. Toasty notes of vanilla and caramel thread through to the finish, imparting a rich, luscious palate.

Being stranded in a desert leaves a lot to be desired — how to get back home, where to find food, water and shelter, and thoughts of survival. For eight years in the early 2010s, Orin Swift Cellars was barred from making any Zinfandel wines. From the grape that started everything OSC, the ‘desert’ gave us an opportunity to explore the diverse range of California’s grape varietals. But, as soon as those eight years were up, we had a plan in place to pay homage to our home. The 2021 Eight Years in the Desert marks the sixth iteration of our return to the world of Zinfandel. <br><br> A deep maroon core with a ruby rim, the 2021 Eight Years in the Desert opens with aromas of wild blackberry, pepper, oatmeal raisin cookie, Sequoia forest floor, bay leaf and spices. A plush mouthfeel offers undercurrents of black cherry with hints of licorice that pull through to a long, spice-tinged finish. <br><br> <b>Viticulture Notes</b><br> California’s 2020 growing season experienced a cool, mild growing season with an accelerated heat spell in August, resulting in early ripening. Vintage 2020 in California shows vibrant acidity and concentrated flavor. <br><br> <b>Winemaking Notes</b><br> We harvested a majority of the grapes for the Apothic Dark at night in cool temperatures to preserve the character of the fruit. We fermented these selected varieties between 86° to 88°F. To create a silky mouthfeel and hints of dark chocolate and spice, we aged the blend in a mixture of French and American oak.

A wet winter gave soils ample water resources for the season ahead. Spring arrived with ideal conditions, giving us wonderful fruit set and healthy yields. Summer was dry and lengthy, allowing fruit to hang on the vines while ripening slowly. Grapes were harvested later than usual, delivering fruit with flavor maturity and concentration while retaining pure fruit expression. <br><br> <b>WINEMAKING NOTES</b><br> We source the fruit for this wine exclusively from Marlborough. Composed from up to 100 small lots from select sites across the region gives Whitehaven a backbone of bright fruit character, well balanced texture and a food-friendly finish. Our Sauvignon Blanc grapes were harvested in cool conditions between late March and early April, then pressed immediately with minimal skin contact. After cold settling, the clear juice was fermented entirely in stainless steel tanks at very low temperatures with select yeast strains to preserve the inherent varietal characteristics and classic Marlborough flavors. Wines sat on light yeast lees in tank for up to six weeks before blending.

The floral and citrus notes linger, leading to a deliciously smooth mouthfeel with a refreshingly clean finish and a dollop of honey. <br><br> <b>Viticulture Notes</b><br> The 2022 growing season was very similar to the previous vintage, with a dry winter and spring. Summer heat accelerated sugar accumulation in white grape varieties and led to an early harvest. The grapes for white wine came in with ideal acidity and concentrated flavor characteristics. <br><br> <b>Winemaking Notes</b><br> We predominantly harvest the grapes for this blend at night. This allows us to preserve both bright fruit components and helps to limit color extraction. The grapes were given a gentle whole-cluster pressing and fermented at cool temperatures to preserve the delicate flavors and aromas. To help develop that lovely soft mouthfeel, a small portion of the wine underwent malolactic fermentation. The wine was kept cool until blending to maintain a perfect balance of acid and fruit.
