Lodi is known as a producer of intensely concentrated, silky textured fruit. California’s 2020 vintage experienced a cool, mild growing season with an accelerated heat spell in August, resulting in early ripening. Vintage 2020 in California shows vibrant acidity and concentrated flavors. <br><br> <b>Winemaking Notes</b><br> We harvested a majority of the grapes for our Apothic Crush at night in cool temperatures to preserve the character of the fruit. The Pinot Noir was cold soaked for 1-2 days, then fermented between 80° to 85°F. The other varieties were fermented between 86° to 90° F. To create a silky mouthfeel and toasted caramel characteristics, we aged the blend in a mixture of French and American oak.

The 2021 Dark Horse Chardonnay is a full-bodied, silky white wine from California. Our Chardonnay opens with aromas of ripe peach, mango, pineapple and honeysuckle. Bright notes of white nectarine, lemon curd, guava and honey play on the palate before finishing with notes of toasty vanilla oak. <br><br> <b>Viticulture Notes</b><br> Our winemaker, Beth Liston, selected the grapes for this Chardonnay from premier vineyards throughout California. The 2021 growing season was dry with budbreak in early March. Harvest began in early August. The resulting grapes were picked at the optimal ripeness while still maintaining their natural acidity. <br><br> <b>Winemaking Notes</b><br> We picked the grapes for our 2021 Chardonnay during the cooler morning and evening hours of August. Fermentation took place at low to moderate temperatures of 55-62°F. Our winemaker carefully selected aromatic yeast to intensify the natural aromatics and enhance the fruit characteristics. After fermentation, the wines were stored in stainless steel tanks to preserve their natural acidity and balance.

Summer was dry and lengthy, allowing fruit to hang on the vines while ripening slowly. Grapes were harvested later than usual, delivering fruit with flavor maturity and concentration while retaining pure fruit expression. <br><br> <b>WINEMAKING NOTES</b><br> Windward Sauvignon Blanc is a blend of our five best lots of Sauvignon Blanc from the 2022 vintage. Both in the vineyards and in our cellar, these standout blocks stood out above the rest for their aromatic intensity, layered flavor development and incredible structure. Sauvignon Blanc grapes were harvested in cool conditions, then pressed immediately with minimal skin contact. After cold settling, the clear juice was fermented entirely in stainless steel tanks at very low temperatures with selected yeast strains to preserve inherent varietal characteristics and classic Marlborough flavors. These lots sat on light yeast lees in tank for up to six weeks prior to blending.

Chardonnay leads the blend while Pinot Gris, Riesling and Viognier add fragrant aromas and complexity. Layers of green apple, lemon zest and tree-ripened apricot open to a palate layered with notes of white peach and vanilla undertones. The finish is bright and crisp. <br><br> <b>Viticulture Notes</b><br> Ongoing drought conditions throughout California caused a slight reduction in crop size in 2021. Mild summer conditions allowed the fruit to take its time ripening and developing optimal flavor concentration. Washington state experienced some prolonged heat spells, which also caused a slight drop in crop size. Harvest in both viticultural regions produced yields of high-quality grapes with excellent quality. <br><br> <b>Winemaking Notes</b><br> To retain the natural characteristics of each varietal, we fermented the blend at cool temperatures. The Pinot Grigio, Viognier and Riesling were fermented 100% in stainless steel tanks to preserve delicate fruit aromas. Select lots of Chardonnay were fermented and aged on oak to add a touch of vanilla before undergoing malolactic fermentation to enhance fruit character.

Our 2021 Clos du Bois Pinot Noir is an approachable, medium-bodied red wine from California. Aromas of cherry and vanilla bean rise from the glass with a touch of anise. This wine brims with layers of sweet cherry, strawberry and raspberry with a silky mouthfeel. Ribbons of toasted oak and caramel underscore the fruit, leading to a long finish. <br><br> <b>Viticulture Notes</b><br> This elegant Pinot Noir is sourced from select vineyards in some of California’s most renowned growing regions. The 2021 growing season experienced a warm spring, which brought on early budbreak. Dry conditions served to further reduce crops size. However, anticipated diurnal temperature shifts kept the fruit from ripening too quickly and allowed it to develop slowly and evenly. <br><br> <b>Winemaking Notes</b><br> We prefer to harvest our Pinot Noir in the cool early morning hours, which helps preserve the inherent fruit character of the grapes. After it is delivered to the winery, we gently destem and send mostly whole berries directly to stainless steel fermenters to be cold soaked at 60-65°F for up to 2 days. During primary fermentation, we meticulously managed the extraction on skins to capture a silky tannin structure. To create subtle hints of vanilla and toasted oak, we racked the wine onto oak and let it age for 3-4 months. Individual lots were then chosen and combined to create the final blend.

Our 2021 Malbec is a big, full-bodied wine made from Argentina's most famous red grape. Showing dark purple in the glass, this wine radiates aromas of blackberry and semi-sweet chocolate. The mouthfeel is silky, leading to a long finish with touches of pomegranate and vanilla bean. <br><br> <b>About The Region</b><br> Some of the most renowned winegrowing regions of Argentina are in Mendoza, a province in the western Cuyo region. Tucked under the massive shoulders of the Andes Mountains, the vines thrive in desert conditions quenched by mineral-rich snowmelt. Altitudes from 3,000 to 5,000 feet surround the vines in cool temperatures, crisp mountain air and sunlight that helps produce the bold flavor characteristics found in Mendoza-grown Malbec. <br><br> <b>Viticulture Notes</b><br> The 2021 harvest in Mendoza began with unseasonal frost in early October. This caused a slight reduction in crop size but was mitigated when warm weather kicked in and the regular diurnal temperature shifts came into play. Overall, the grapes were allowed to fully ripen on the vine, resulting in outstanding quality. <br><br> <b>Winemaking Notes</b><br> The grapes for our Malbec were hand harvested, de-stemmed and crushed. The must was cold soaked for 72 hours prior to fermentation, which occurred over seven days in both upright and conical tanks at a maximum temperature of 85°F. For optimal extraction of color and flavor, we used pump-overs and the skins were left in contact with the juice for up to 20 days. This wine was aged on a combination of French and American oak before bottling.

Summer brought the usual weather patterns that California vineyards thrive on: warm sunny days and cool fog-laden evenings, which allows the fruit to ripen slowly and evenly. The result is fully developed flavor characteristics, color and acidity. <br><br> <b>Winemaking Notes</b><br> To retain the lively acidity and fruit characteristics of our Sauvignon Blanc, the grapes were harvested in the cool hours of the evening or early morning. After arrival at the winery, the fruit was gently pressed as whole clusters before being racked into stainless steel tanks to undergo fermentation. The yeast strain was chosen for its minimal impact on the flavors and aromas of the wine allowing the fruit to shine. The resulting wine is fresh, vibrant and delicious.
