Sweet Fruited Salmon
Recipe
- 1 large orange, peeled, seeded and diced
- 1 small grapefruit, peeled, seeded and diced
- 1 small jalapeno, seeded and minced
- 2 tablespoons snipped cilantro
- 1 medium tomato, seeded and diced
- 1/4 cup diced red onion
- 2 tablespoons red wine vinegar
- 1 tablespoon vegetable oil
- 3/4 teaspoon Seasoned Salt
- 1/2 teaspoon Garlic Powder with Parsley
- 4 salmon steaks (5 oz. EACH)
- Lemon juice
In medium bowl, combine all ingredients except salmon and lemon juice; refrigerate. Brush salmon steaks with lemon juice and grill 5 inches from heat source for 5 to 7 minutes on each side. To serve, spoon chilled fruit salsa over salmon.
