    Peppered Stir-Fry Shrimp

    Recipe

    • 1 tablespoon vegetable oil
    • 1 small onion, thinly sliced
    • 1 small green bell pepper, thinly sliced
    • 1 cup sliced baby carrots
    • 1 cup Sweet & Spicy Stir Fry Seasonings
    • 3/4 pound uncooked, peeled, deveined medium shrimp, thawed, if frozen
    • 1 can (5 1/2 oz.) pineapple chunks, drained
    • 4 cups cooked rice

    In large nonstick skillet, heat oil over medium-high heat until hot. Add onion, bell pepper and carrots; stir-fry until lightly tender, about 2 to 3 minutes. Stir in Sweet & Spicy Stir-Fry Seasonings and shrimp. Cook until shrimp are pink and firm stirring occasionally, about 3 to 4 minutes. Add pineapple; continue to cook 1 minute. Serve over cooked rice.
