    Mediterranean Salad

    Recipe

    • 1 head Romaine lettuce - shredded
    • 2 cucumbers - sliced
    • 1 cup Roma tomatoes, diced
    • 1/2 cup Kalamata olives (or small jar)
    • 1 - 8 oz. jar Artichoke hearts,
    • 1 Red onion, sliced
    • 1 cup Feta cheese

    In a large salad bowl, toss together lettuce, cucumbers, tomatoes, olives, artichoke hearts, red onion, and feta cheese. Chill until ready to serve. Serve with a sun-dried tomato dressing, restaurant style Italian, or vinaigrette.
