Captain's Favorite Grouper Stew
Recipe
- 2 pounds grouper fillets cut into 1 inch pieces
- 2 tablespoons paprika
- 1 tablespoon minced garlic
- 1 tablespoon margarine
- 4 cups chopped yellow squash
- 1 1/2 cups chopped onions
- 1 cup chopped celery
- 6 medium tomatoes
- 2 cups corn kernels
- 1 tablespoon tomato paste
- 1 teaspoon oregano
- 1 teaspoon thyme
- 1 teaspoon savory
- Seafood alternatives: swordfish, catfish or mullet
Combine fish, paprika and garlic. Melt margarine in a skillet and cook fish on medium-high heat until fish flakes easily. Remove from heat and set aside. Combine squash, onions, celery and tomatoes in a food processor, process until smooth. In a large sauce pan combine corn, tomato paste, oregano, thyme and savory with vegetable mixture; simmer on medium heat for 15 minutes. Add fish; heat thoroughly and serve.
