    Grilled Beef Filet with Zucchini Sauce


    • 1 ¾ pounds filet mignon (not sliced)
    • 2 teaspoons Seasoned Salt
    • Freshly ground black pepper
    • 1 tablespoon Extra Virgin Olive Oil

      Zucchini Sauce
    • ¼ cup Extra Virgin Olive Oil
    • 4 garlic cloves, chopped
    • 1 teaspoon Seasoned Salt
    • 3 large zucchini cut into ¼ inch slices
    • ½ cup water or chicken stock
    • 2 ounces unsalted butter, softened

    Rub the beef with the Seasoned Salt, pepper and the oil. Grill to desired doneness. Rest beef at least 10 minutes before slicing.

    Heat olive oil over medium-low heat. Add garlic and Seasoned Salt and sauté for two minutes. Do not let garlic brown. Add zucchini and stir-fry for 2 minutes. Add water and simmer about 5 minutes or until zucchini is just beginning to soften. Put half of the zucchini slices (without liquid) in a blender with the butter and blend until almost smooth. Return sauce to skillet with zucchini slices and gently combine.

    Place zucchini sauce on plates and top with sliced beef. Garnish with a sprinkling of pepper.
